Yorkshire Pudding Recipe

3/4 cup all-purpose flour
1/2 teaspoon salt
3 eggs
3/4 cup milk
1/2 cup pan drippings from roast prime rib of beef

Preheat the oven to 450 degrees F.
Sift together the flour and salt in a bowl. In another bowl, beat together the eggs and milk until light and foamy. Stir in the dry ingredients just until incorporated. Pour the drippings into a 9-inch pie pan, cast iron skillet, or square baking dish. Put the pan in oven and get the drippings smoking hot. Carefully take the pan out of the oven and pour in the batter. Put the pan back in oven and cook until puffed and dry, 15 to 20 minutes.

Aunt Bessies. You can also use batter, put it in a cake tin and cook it in the oven.

Serve it with gravy and beef and peas and roast taters.

Or chicken. Or pork, chops or faggots.

1 cup flour

2 large eggs
make a hole in the flour and mix in one egg at a time smoothly
Blend in
1 cup milk
Take the roast out when it is done and turn up oven heat to 425.
Spoon off some of the fat (make sure it is only the surface fat) and put a little into the bottom of muffin pans - probably 8 will do. You could use a bit of oil if you run out of beef fat.
Put the muffin pan with fat into the oven until the fat starts to smoke and spit.
Carefully take them out and spoon your batter in on top of the hot fat.
Back in the oven (quickly) and bake for 20 to 25 minutes.
While the yorkies are in the oven make your gravy.
My dad always said if you leave the eggs out for a bit you will get fluffier, higher puddings.

100 grams plain white flour
1 large egg
200 mls milk
salt and pepper
oil
baking tin or yorkshire pudding tins

heat up oil in tin.
in a bowl sieve the 100grams of flour, make a whole in the flour and crack the egg into the whole, add a pinch of salt and pepper, for a herby batter add some sage. gradually add the milk mixing the batter with either a hand whisk or electric, till you have a light thin batter. , put in the oven for around 30 mins till risen and goldern brown, served with any roast meat mash potatoes, seasonal veg and gravy.

8 thick pork sausages
same as above except cook the sausage first then pour on batter

must have done 100s of 1000s of yorkies but recipe ? I just did it !

3 types of yorkies small 'Bumblies' about 2 inches The large yorkie about 6 inches min. and the true yorkie in beef dripping and aspic -in a large tray cut into slices mmmmmm

Flour 8 oz 4 eggs (the more eggs the better it rises and sets)
and will be lighter
milk salt and optional herbs

Mix all together -to a pancake like consistency- too thick it will be stodgey and thick - too thin it will be all air and puffy !

Critical is to have oven very hot and to have oil in tray hot before adding mixture
