Drain sweet potaoes put in baking dish. Bring juice to a boil add bronw sugar and cook till thick. take off stir in butter and pour over sweet pot. bake for 30 mins.

Peel and slice five or six large sweet potatoes. Add one cup water and two sticks butter and 1-2 cups brown sugar.
Cover with lid and simmer until tender. Remove lid and cook until butter and sugar browns. Turn as often as needed.

Boil the sweet potatos until a fork pierces them easily and then let them cool. Peel skin off and slice in half, placing them into a baking dish. Liberally put brown sugar on the potatoes and dot with butter (about 1 to 1 1/2 sticks). Bake at 350 degrees for about an hour occasionally using a baster to take the syrup and recoat the potatoes.

Sweet potatoe pie--- Very good!

INGREDIENTS
2 cups mashed sweet potatoes
3 eggs, beaten
1 cup evaporated milk
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
1 (9 inch) unbaked deep dish pie crust



DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, mix the sweet potatoes, eggs, evaporated milk, cinnamon, nutmeg, cloves and salt. Pour into the pie crust.
Bake at 350 degrees F (175 degrees C) for 50 minutes, or until a knife inserted in center comes out clean. Top with whipped topping or serve warm with vanilla ice cream.

INGREDIENTS
3/4 pound sweet potatoes
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
2 eggs, beaten
1 1/2 cups milk
1/4 cup butter, melted


DIRECTIONS
Place sweet potatoes in a medium saucepan of boiling water, and cook until tender but firm, about 15 minutes. Drain, and immediately immerse in cold water to loosen skins. Drain, remove skins, chop, and mash.
In a medium bowl, sift together flour, baking powder, salt, and nutmeg. Mix mashed sweet potatoes,spices, eggs, milk and butter in a separate medium bowl. Blend sweet potato mixture into the flour mixture to form a batter.
Preheat a lightly greased griddle over medium-high heat. Drop batter mixture onto the prepared griddle by heaping tablespoonfuls, and cook until golden brown, turning once with a spatula when the surface begins to bubble.


Smushed apples & sweet potato---Good!!

INGREDIENTS
2 large sweet potatoes, peeled and diced
2 tablespoons butter
1/4 cup white sugar
2 teaspoon ground cinnamon
1 teaspoon ground allspice
1 Granny Smith apple - peeled, cored and sliced
1/8 cup milk


DIRECTIONS
Place the sweet potato in a medium saucepan and fill with enough water to cover the potatoes. Bring to a boil, reduce heat to medium, and simmer for about 20 minutes or until tender. Remove from heat, drain and set aside.
Melt butter over low heat in a small saucepan. Mix in the sugar, cinnamon and allspice. Add the apple slices, cover, and let simmer for 5 minutes, or until the apples are tender. Mix the apple mixture into the drained sweet potatoes along with the milk. Mix well using an electric mixer or just a fork until potatoes are mashed.


Mashed sweet potatoes.

INGREDIENTS
6 sweet potatoes, peeled and cubed
3/4 cup milk
1/2 cup butter
3/4 cup maple syrup


DIRECTIONS
Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes.
With an electric mixer on low, blend potatoes, slowly adding milk, about 1/2 a cup at a time. Use more or less to achieve desired texture. Add butter and maple syrup, to taste. Blend until smooth. Serve warm.
