"Bistro French Fries With Parsley and Garlic"

Ingredients-
4 medium russet potatoes (about 1 3/4 pounds), unpeeled
2 tablespoons canola oil
1/4 cup chopped fresh parsley
2 garlic cloves, minced
Coarse salt


Preparation-
Position rack in center of oven and preheat to 425°F. Cut potatoes lengthwise into 1/3-inch-thick slices, then cut lengthwise into 1/3-inch-wide strips. Pat potato strips dry with paper towels. Combine potatoes and oil in large bowl; toss to coat well. Divide potatoes between 2 large baking sheets; spread in single layer. Bake until potatoes are deep golden brown, turning and rearranging potatoes frequently, about 40 minutes.
Transfer potatoes to bowl. Toss with parsley, garlic and coarse salt.

Twice Baked French Fries:

40 min 15 min prep
4 servings

4 russet potatoes, peeled and cut into french fry strips.
1/4 cup butter, melted
salt and pepper
garlic powder
onion powder
1 dash cayenne pepper

Spread potatoes on lightly greased jelly roll pan and bake at 375° for 15 minutes.
Drizzle melted butter over (use more if needed to coat all of the potatoes).
Sprinkle liberally with salt and pepper, then add other seasonings as desired.
Toss together to be sure all of potatoes are coated with butter and seasonings.
Return to oven until potatoes are crisp and tender.

I know this is not truly "homemade" fries but I've done it your way and have failed miserably. Instead, I found frozen french fries in the regular grocery market that you bake for about 15 minutes that turn out just as good as the fast food chains.

They are made by Ore Ida and come in a red bag. They have different varieties such as fast food, curly, steak, seasoned, crinkle cut, extra crispy, etc. and they are fantastic!

This way the fries come out perfect, you don't have to use your deep fryer, smell up the house with cooking oil and clean up is super fast.

Mix 1/4 c dijon mustard w/ 2 Tbsp of olive oil. Add 1 tsp basil to this and coat fries. Bake 400 for 10 min on each side.

LOW FAT CRISPY OVEN FRENCH FRIES

4 med. potatoes
1 tbsp. oil

Preheat oven to 475 degrees. Peel potatoes and cut into long strips, about 1/2 inch wide. Dry strips thoroughly with paper towels. Toss in a bowl with oil as if making salad. When strips are thoroughly coated with the oil, spread them in a single layer on a cookie sheet and place in preheated oven for 35 minutes. Turn strips periodically to brown on all sides.
If a crispier, browner potato is desired, run under broiler for a minute or two, watching carefully. Sprinkle with salt at serving. 6 servings. Approximate calories per serving: 80.
