What are some favorite meals you remember from childhood? You know, comfort food. My mom made pork chops with?!
Answers: burnt pork chop gravy. She tried, but she had 8 kids and was always running around like a chicken with her head cut-off. Strange analogy, but true. How about you though, what kind of food was served in your home when you were a kid.
My mom was always a over-cooker. (tons of leftovers) She used to do this thing with our next-day left-over mashed potatoes:
Boil hotdogs until half-done, just kind of warmed up.
Take them out of water and cut a slit down center of hotdog.
Stuff hotdog full of (warm - slightly heated) left-over mashed potatoes.
Lay slices of Velveeta (must be Velveeta) cheese ontop of potatoes.
Place on cookie sheet and bake in oven at 350 for about 10 min - or until cheese is melted & bubbly and potatoes slightly golden.
That is my favorite "comfort food" that my mom used to make, and it was an original, one-of-a-kind recipe. I don't know anyone else who has ever heard of this or made it.

My grandmother in Denmark had a very special treat when I was 5 years old.
In Denmark you can buy thin slices of fine chocolate, that she would put on a slice of buttered bread.... Much, much nicer than "nuttella" type choc spreads, because it is CRUNCHY chocolate on 'creamy' bread and butter... YUM!!!
Tuna mornay, sausage and bean casserole, my dads egg flip, nanas sausage pie, lamb chops, mash and peas and most bizarre and most comforting of all, chicken liver pate on cheese rolls !
And now I want to try stuffed hot dogs (and try not to think of the heart congestion) and Chicken Sh!t Sandwich - thats just too strange not to !
Mine was pot roast on Sunday afternoons. She would put it in the oven before we left for church, and when we got home, there was the best smell ever. That, and coming home from school on a winter evening after cross country ski practice, and walking in to the smell of chocolate chip cookies. To this day, the smell of baking chocolate chip cookies or pot roast gives the biggest sense of calmness!
Mom's fried chicken, real mashed potatoes and real gravy with green beans, and iced sweet tea. Peach cobbler for dessert.
Fried breakfast pork chops, no flour, just salt & pepper and fried. Red beans and cabbage slaw, with cornbread, butter and iced tea. Homemade Chocolate meringue pie that was out of this world.
My mom wasn't big on cooking, but what she did cook was great! My favorite thing she made was Chicken Sh!t Sandwiches! It was like shredded chicken, but she made it with cream of mushroom soup, crumbled potato chips, and baked it all....and because of the cream of mushroom soup....hence the name Chicken Sh!t Sandwiches! I love them to this day!
Homemade vegetable soup and cornbread on a cold winters day! Yummmm!

Pan fried (slightly charred) bratwurst, spinach with garlic and vinegar and good old Kraft mac & cheese....Then there was the time they made us eat squid....not comforting at all!!

Mmmmm, my mom was a great cook! Fried chicken, roasted stuffed chicken, macaroni and cheese, stuffed pork chops, meat loaf, pot roast, beef stew, baked spaghetti, tuna casserole...good basic food! And her deserts were divine! Her lemon meringue pie and peanut butter cookies were my favorites!
