Low fat recipies for 1?!


Question: i live alone and most nights eat alone well everynight i dont eat at work i eat alone and my blood pressure is sky rocketting because of all the junkfood iv taken to eating since starting to live on my own because its just easyer to go and buy something instead of making alot and then having to waste some of the food soooo my question is

do you know anyplace i can go to that has some good lowfat or just healthy in general recipies for just one person or any suggestions.

im knew at this alone thing its kinda wierd not making enough food for any army please help

Go to this site and click on Cooking for two. It'll give a whole shebang of great recipes for one or two people

you can use any recipe. If it says for 4 people divide the recipe by 4 and then make it. you can go to allrecipes.com and pick out a recipe and you can adjust it to one person.

if you dont like to cook. subway is a good meal. 6" subway club on wheat w/no cheese. If you cook, choose chicken breast w/steamed broccoli or veggies. Mix it up, try stir fry or chicken soup. that way your high in protein w/ some carbs and very low on fat. hope this helps

Sandwiches and low sodium soups are always available, taking vitamins that your body needs is a good way to contribute. Subway is in every city. Whole wheat as opposed to white bread is best anything fried is bad. eat lots of fruits and vegetables. if youre vegetables rot buy frozen ones that way you can boil them. when you buy meat in bulk you can divide it into ziploc bags and freeze the rest, you can freeze bread and microwave it. aside from these things taking walks daily or regular exercise is necessary.

I love to use the goerge foreman grill b/c you can make just about anything, grilled chicken, steak, pork chops etc. put it over a salad or with some vegies and whole grain rice (there is a great Uncle Ben's microwave rice, 90 seconds!) You can also make chili with low fat meat and freeze some in containers for times when you dont feel like cooking:) I love to check out the food network website they have lots of ideas good luck!

If you are going to buy meals anyway, go for the Lean Cuisine, or Healthy Choice , both of wich are low fat.

Go to Costco or Sam's Club if you have one:

I buy like romaine lettuce and cheese and add jus basically cut it up and add cranberries with a low fat dressing.

Chicken is good too. You can pan fry it and jus season it. Once you sear both sides throw it in the oven for like 15 mins.

Fish is good too.

My grandmother lived alone for years and would buy a regular roast, cook it, and slice it up. She would then put it into aluminum foil packets, label it, and freeze it. Now adays you can use zip lock bags - but put the things into serving sized packages. You can do that with the raw meats too - like one thigh and one drumstick if you eat that much or just one thigh. Put the rest of the bird in separate zip lock bags too, then into a gallon sized zip lock bag, put a piece of paper in with it saying what it is - so many things look the same when frozen. You can pull out just the right amount of frozen meat (can do it with ground beef as well), veggies, whatever you have frozen.

Here are some 1-person recipes for you.

1 hamburger patty (I weigh mine at 8 oz each and put them in saran and then in the zip lock bags)
1 regular sized can of kidney beans
1 small sized can of tomato sauce (not tomato paste)
1 package of Chil-o Mix or Chili mix (you want to use about 1 tablespoonful out of the package or more depending on how hot you want it.
1 small can of mushrooms - sliced or pieces - drained
1 cup of cooked Instant Rice so about 1/2 cup uncooked

Saute the ground beef, crumbling it as it cooks, until no longer pink. Drain off the grease. Add the tomatoes, mushrooms, chili mix, and kidney beans. Bring to a boil, turn down the heat and simmer for 30 minutes. Serve over the rice. You should have enough left for one more meal. And it is always better the second day - like with spaghetti sauce.

Here's a dessert recipe for you. It makes 4 small brownies so you can have 2 for dessert.

BROWNIE BITES

2 T mayonnaise
1/4 tsp baking powder
2 T cold water
1 T chopped nuts
1/4 tsp vanilla
1-2 tsp powdered sugar
1/4 c flour
3 T sugar
1 T unsweetened cocoa powder.

Combine the mayonnaise, cold water and vanilla. Stir in the flour, sugar, cocoa powder, and baking soda until well mixed. Stir in chopped nuts. Spray a small individual serving corningware pan or 4 1/2 x 2 1/2 x 1 1/2 loaf pan and pour the batter into the pan. Bake at 350o in a toaster oven for 20-25 minutes or until done. Cool thoroughly. Remove from the pan, cut into 4 bars and sprinkle powdered sugar on the bars.

Here's another dessert for you:

APPLESAUCE SPICE CAKE
1/4 c + 2 T sugar
3/4 c flour
1/2 tsp vanilla
1 egg white
2 T butter
1/4 c + 2 T applesauce
1/2 tsp cinnamon
dash of nutmeg
1/4 tsp cloves
1/4 tsp baking soda dissolved in 3/4 T hot water off of
1/2 c stewed raisins

Bake at 350o for 50 minutes.

Here are some hints I found over the years. Buy babyfood jars of whatever fruit you plan to bake with when making small portions. Then you won't have so much left over.

Buy a small skillet. Then you won't have a little bit of food in a great big (normal sized) skillet.

Get a toaster oven. Then you won't be lighting off the big oven for a small amount of food - this will also save on your electric bill.

Package everything in small portions. As long as you shake up the mix in a cake mix in a box, you can make a small cake using only part of the whole recipe - just remember to divide the rest of your ingredients as well. First shake it all up, then pour the mix into a measuring cup to see how much you have. Then divide it into thirds and place in - you guessed it - zip lock bags. Place that into a gallon sized and label it. Use 1/3 and write a piece of paper saying what you need to add to it to make the recipe. Buy small pans - cake pans, pie tins - I did all that when I retired. Then you can make small portions. You are worth making good food for. My Great-Aunt had a terrible time realizing that she was worth cooking for. She loved to cook but when her hubby died, she said there was no one there to appreciate it. She forgot about herself.

You can make chicken and dumplings for yourself. Just take a normal recipe and cut it down. If you are interested in my recipe for chicken and dumplings for 2 (my hubby is still with me so I cook for 2) - it makes 5 dumplings that are very good. But, in looking at the recipe, you can cut it again and make 2-3 dumplings. Cooking one piece of chicken - thigh or whatever - 3 baby carrots, 2-3 slices of onions - diced, 1/2 stalk celery, a bay leaf, some broth and you are good to go.

If you want to cook up some chicken for a nice chicken salad, you can save the broth to use for things like the chicken and dumplings or gravy - removing the fat before using by refrigerating it (all the fat will float to the top so you can remove it)- and having it salt-free to help your BP. You can take a couple of pieces of that chicken - the back and wings if you buy a whole chicken - place in some water that you have added about 1/2 tsp of chicken base to - this will help flavor the broth but it will also add some sodium so you can leave it out if you'd like. Use the back and wings if you are just making broth. Cook them for 1 hour and then remove the chicken. You don't need to add veggies or anything to the broth - this will just be basic broth. If you are cooking chicken for salads, you'll do a different process. Put water in a pot, bring to a boil, add the chicken pieces and bring back to the boil. Once it's back to the boil, turn off the heat, cover it, and let it sit to room temperature. The chicken will be cooked perfectly - nice and moist. Remove the chicken (the water won't have much flavor), remove the skin, and take the meat off the bones, breaking it into pieces. Use that for a nice chicken salad:

CHICKEN SALAD

Bed of mixed greens
1/2 apple - chopped (put the other half in the fridge in a zip lock bag and use the next day for something)
1/4 c cranraisins
cooked chicken
2 T toasted walnuts
2 T toasted sunflower seeds
2 T toasted pine nuts
Feta cheese
Raspberry Vinaigrette (Knottsberry farms brand is very good - they even make nonfat)

Place the mixed salad greens in a large bowl (like a serving bowl), place the apples over it, the cranraisins over the apple, the chicken pieces over the cranraisins, the toasted nuts over the chicken, and sprinkle with the Feta cheese. (I keep my Feta cheese in the freezer and just scrape off some into a custard cup, zap it for 10 seconds to thaw, and then sprinkle over the salad. Place the Raspberry Vinaigrette in a custard cup and lightly spoon on however much you prefer on your salad.
