I have a COOKIE QUESTION...?!
Answers: i'm out of baking powder and don't have time to go to the store. can i use baking soda instead?? and if so would i use the same amount?? thank you so much for your help!
Substituting in recipes:
Baking powder is generally just baking soda mixed with an acid, and a number of kitchen acids may be mixed with baking soda to simulate commercial blends of baking powder.
The most common suggestion is to use two parts cream of tartar with one part baking soda.
Vinegar (dilute acetic acid), especially white vinegar, is also a common acidifier in baking; for example many heirloom chocolate cake recipes call for a tablespoon or two of vinegar.
Where a recipe already uses buttermilk or yoghurt, baking soda can be used without cream of tartar (or with less). Alternatively, lemon juice can be substituted for some of the liquid in the recipe, to provide the required acidity to activate the baking soda.
Baking powder is sodium bicarbonate and potassium bitartrate.
If you don't have baking powder, you can't substitute baking soda, but you can make baking powder using two parts cream of tartar and one part baking soda.
For example, two teaspoons of cream of tartar plus one teaspoon of baking soda would give you three teaspoons of baking powder.
Unless the recipes states otherwise, begin baking as soon as you have finished mixing the ingredients, since the chemical reaction that causes the rising starts as soon as wet and dry ingredients are mixed.
Note:
Combine a tablespoon of baking soda with 2 tablespoons of cream of tartar and 1-1/2 tablespoons of cornstarch. It may not have the same potency as a good store-bought double-acting baking powder, but it will serve in a pinch.
hope this helps. good luck.
NO they are to very different thing dont do it at all, go to your nieghbor. trust me i am taking food courses and we just disscussed this. DONT, you will ruin your cookies.
use:
1/4 teaspoon baking soda plus 1/2 teaspoon cream of tartar for every 3/4 of baking powder that the recipe calls for.
DO NOT USE ONLY BAKING SODA TO REPLACE BAKING POWDER!!! IT WILL MAKE YOUR COOKIES WAY TO SALTY!!!!!!!!!!!!!!!!!!!!!!!!!
A good substitution is 1/4 teaspoon baking soda plus 1/2 teaspoon cream of tartar plus 1/4 teaspoon cornstarch
1 1/2 teaspoons single-action baking powder
1/4 teaspoon baking soda plus 1/2 cup buttermilk, sour milk or yogurt to replace 1/2 cup non-acidic liquid.
i watched a show that did the same thing and it didnt turn out 2 good
but hey its just telelvision so im really not sure ive never tried it
if you absolutely do not have acess to powder use 2/3 baking soda and 1/3 cream of tartar
