Question: Disgustingly Rich Brownies
1 cup butter
3/4 cup cocoa
2 cups sugar
4 eggs
1 teaspoon vanilla extract
1/4 cup all-purpose flour
1 teaspoon salt
1/2 cup chopped walnuts
shortening to grease the pan
Preheat oven to 350 degrees, then smear the inside of an 8 or 9-inch baking pan with shortening. Melt the butter over a low heat. Watch it. It's easy to burn. In a mixing bowl, stir the cocoa and sugar together. Then stir in the melted butter. Add the eggs and vanilla, stir again. Add the flour and salt, and mix just until smooth. Not too much. (If you're adding walnuts, now's the time). Scrape the mixture into the prepared pan and smooth into an even layer. Bake in a 350 degree oven for 40 to 50 minutes, until the brownies just begin to pull away from the sides of the pan (or until you can stick a toothpick in and pull it out with no batter sticking to it). Have your grown-up assistant take the pan out of the oven, then (the hardest part) let cool for a while before cutting.

* 2 large eggs

* 3/4 cup all-purpose flour
* 1/4 teaspoon salt
* 1/2 cup chopped walnuts or pecans (optional)

Directions:
PREHEAT oven to 325o F. Grease 8-inch-square baking pan. Set aside 2 tablespoons morsels for drizzle topping.

HEAT 1 cup morsels, sugar, butter and water in small saucepan over low heat, stirring constantly, until chocolate and butter are melted. Pour into medium bowl. Stir in eggs, one at a time, until mixed in. Stir in vanilla extract. Add flour and salt; stir well. Add remaining morsels (except drizzle morsels) and nuts, if desired. Pour into prepared baking pan.

BAKE for 33 to 35 minutes until wooden pick inserted in center comes out still slightly sticky. Cool in pan on wire rack.

PLACE reserved 2 tablespoons morsels in small, heavy-duty plastic bag. Microwave on HIGH (100%) power for 20 seconds, knead bag to mix. Microwave at additional 10- second intervals, kneading until smooth. Cut a small hole in corner of bag; squeeze to drizzle over brownie. Cut into bars.

2.) Chocolate Raspberry Brownie Mousse Delight

* BROWNIE

* 1/2 teaspoon salt
* 1 cup granulated sugar
* 1/3 cup (2/3 stick) butter, softened
* 1 teaspoon vanilla extract
* 2 large eggs
* 1/3 cup frozen raspberries, drained, mashed
* RASPBERRY MOUSSE
* 1 pkg. (8 oz.) cream cheese, softened
* 3/4 cup powdered sugar
* 1/2 teaspoon vanilla extract
* 6 to 7 drops red food coloring (optional)
* 1/4 cup frozen raspberries, drained, mashed
* 1/3 cup whipping cream

Directions:
FOR BROWNIE:
PREHEAT oven to 350o F. Grease 9-inch-square baking pan.

MICROWAVE 1 cup chocolate morsels in small, uncovered, microwave-safe bowl on HIGH (100%) power for 45 seconds; STIR. Morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until smooth; cool to room temperature.

COMBINE flour, baking powder and salt in small bowl. Beat granulated sugar, butter and vanilla extract in medium mixer bowl until creamy. Add eggs; beat until light and fluffy. Beat in melted chocolate. Stir in flour mixture until blended. Stir in mashed raspberries. Spread into prepared baking pan.

BAKE for 25 to 30 minutes or until wooden pick inserted in center comes out slightly sticky. Cool completely in pan on wire rack.

FOR RASPBERRY MOUSSE:
CHOP remaining morsels into roughly 1/4-inch pieces. Beat cream cheese, powdered sugar, vanilla extract and food coloring, if desired, in medium mixer bowl until creamy. Fold in mashed raspberries and chopped chocolate morsels.

BEAT cream in small mixer bowl until stiff peaks form. Fold into raspberry cream cheese mixture until blended. Spread mousse over cooled brownie. Refrigerate for 1 hour. Cut into bars.

Stir in eggs, one at a time, until incorporated. Stir in vanilla extract. Add flour, baking soda and salt; stir well. Stir in nuts. Pour into prepared baking pan.

BAKE for 16 to 20 minutes until wooden pick inserted in center comes out still slightly sticky. Cool in pan on wire rack. Cut into bars.

BUTTERSCOTH BROWNIES

INGREDIENTS:
1/2 cup butter
2 cups brown sugar
2 eggs
2 tsp. vanilla
2 cups flour
1-1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup chopped cashews or walnuts, if desired
PREPARATION:
Preheat oven to 350 degrees F. In heavy saucepan, melt butter over low heat. Then remove from heat and stir in sugar until blended. Add eggs and vanilla and beat until combined. Add dry ingredients and mix.
Stir in nuts, if using, and spread into a greased 13x9" pan. Bake at 350 degrees F. for 30 minutes. Then cool on wire rack and cut into squares.
