How can I make a Christmas cake without using any alcohol?!

Use a different recipe - there must be LOADS of variations on this type of cake.

If you absolutely must make it without alcohol, soak the fruit in orange juice instead

just make a basic fruit cake with no alcohol, alcohol was only really used in days of old to preserve the cake

Ingredients
125g/4oz raisins
125g/4oz dates
125g/4oz chopped peel
225g/8oz sultanas
225g/8oz currants
125g/4oz brown sugar
225g/8oz suet
1 tsp salt
225g/8oz plain flour
juice and rind of one lemon and one orange
225g/8oz breadcrumbs
225g/8oz grated carrots
1 tbsp black treacle
1 tsp bicarbonate of soda, mixed in a tiny drop of milk
1 tsp baking powder
1 tsp mixed spice
1/2 nutmeg, grated
3 eggs

Method
1.Mix all the ingrediants
2.Turn into 3 x 2 pint or 2 x 3 pint buttered pudding bowls.
3. Cover with folded greaseproof paper and foil and tie with string.
4. Steam for 8 hours then take the tops off and re-cover with dry greaseproof paper and foil, secured with string.
5. Store in cupboard until needed.
6. Steam for another 4 hours and serve with brandy sauce/cream/ice cream.

yea just put some in no-one will notice but try and replace it for something that is like it i have no idea what but go on google and type in christmas cake recipies without brandy or whatever and it should come up with a few there is an alternative for everything these days. i mean No meat ,go veggie

Usually the sherry/brandy is needed to SOAK the dried fruits for a few hours before cooking, so just use orange or other juice instead of the alcohol in the recipe to soak and hydrate the fruit so it becomes plump again.

And the other reason was to drizzle brandy or sherry over the finished cake, after baking, as a preservative. In this day of refrigeration etc, it just isnt needed.

If you do want the "flavours" of brandy or rum in your cake or 'rum balls' etc , just use the liquid ESSENCES that you can buy in the cooking section with your other baking ingredients. Just add the teaspoon or so of essence flavouring in to the mix with other liquids like the eggs etc. when you prepare the cake prior to baking it.

All Christmas cake is a rich fruit cake, some people soak the raisins & sultanas in rum or brandy before or add the brandy or rum in after cooking by spreading it over the cake before you maripan and ice it. just soak you fruit in water for about 2 hours before hand and drain well.

Try adding ground almonds into your cake mix for a extra flavour

use cold tea or fruit juice instead. Its just as nice
