First they use what is called a 'milk' cheese. Go to your local grocery store and look in the area where you find the cream cheeses. There should be a small package of milk cheese. They are usually available in both mild and spicy packages. Melt as directed using milk.

Now if you really want to make it:
1 cup mont. jack cheese
1/2 cup Pepper Jack
3/4 cup milk

Melt cheese and milk together until smooth.

Note: These dips will usually thicken a tad after standing and if you refrigerate it, then you would need to add a couple of tablespoons additional milk to reheat. Hope these helps.

heat up some heavy cream, then just add either pepperjack or regular jack cheese till it gets all thick and gooey. then season to your liking. enjoy and good luck!

Walmart sells it in the dairy section, next to the potato salad. I don't like spicy stuff, so I had gotten the plain one and it was too too plain. The mild is much better, and there's a spicy as well.

"White Cheese Dip"

Ingredients-
1 cup butter
3 cups shredded Monterey Jack cheese
1 cup sour cream
2 (4 ounce) cans diced green chilies, drained

Preparation-
Melt butter in a saucepan over medium heat. Reduce heat to medium-low, and stir in shredded cheese until melted. Mix in sour cream and green chilies, and cook, stirring occasionally just until heated through. Do not allow to boil.

I go to Mexico every summer and do mission work and the white cheese they make in the Mexican Resturaunts is goat cheese. I know, this sounds awful, but it really is good. You can get it in the Dairy section next to the cream cheese at Wal-mart. Good luck!

If you're referring to "queso fundido" it is simply grated white cheese (use Jack, Mexican Queso Fresco, Mozzerella, or whatever) placed into an oven-proof bowl and melted under the broiler.
You can add chopped chiles, cooked and crumbled Chorizo sausage as well.
Serve with warm tortillas of your choice.
