ASAP--I need ideas for side dish(es) with roast pork tonight.?!
Answers: I have a pork roast in the crock pot right now. I am cooking it from a recipe I found on the internet which calls for the roast to cook in apple juice with sliced apples. It sounded really yummy for a cold fall day, but now I need ideas for side dishes. I'm kind of tired of the meat and mashed potato thing, so any creative ideas would be greatly appreciated, but I need them ASAP! Thanks for your help!
We are eating very few potatoes now due to their glycemic index; and I miss them but am pulling out some easy options.
This is one I used to make for potlucks
2 pkg frozen squash
1 8 oz container sour cream
1 can cream of mushroom soup
Mix together and bake until bubbly.
Or, for something different and easy, try one of the following, can be baked at a range of oven temperatures (takes just over an hour at 350 in my oven)
Put 1 cup brown rice in a casserole dish. Add 2 pkgs powdered boullion (I use Goya), some garlic powder, and parsley. Also one chopped onion or dehydrated onion. Add 3 cups water, cover with foil and bake till water is gone. I do this a lot, it makes very flavorful rice without having to put gravy on top and is low fat.
Put 1 cup barley in a casserole dish. Add one chopped onion, 2 ribs of chopped celery, 2 cloves of garlic, and half a dozen or so carrots sliced up. Add 2-3 cups beef or chicken broth, cover with foil and bake till water is absorbed. Very tasty, good for your cholesterol and blood sugar as well as cheap.
How about rice? You can make white rice and add butter and salt and even a little garlic. Salad would be good too. What a casserole? Green bean casserole? If you don't want to make mashed potatoes, you could always make baked potatoes or scalloped potatoes. Good luck!

baked beans, cole slaw, mac or potato salad, pasta salad, home made mac and cheese, tossed salad
Roasted brussel sprouts are good, and let me just reiterate that fresh ones are far superior to frozen. If you get fresh ones, cut them into quarters and toss them in olive oil and salt and pepper, and roast them on a grease pan at a higher heat (like 375 or 400 degrees) until they get a little bit charred and brown. VERY TASTY!!!
Or, some nice butternut squash or sweet potatoes would be good...
Sweet and sour red cabbage.
Mix
1/4 cup vinegar
!/4 cup water
2 tablespoons sugar
Shred half of red cabbage and cook it in the vinegar.
Green Bean Casserole
Rice and gravy. Thicken the pork drippings with a tyable spoon or two of Flour and add a beef boullion Cube and poor this over the rice. Add cauliflower as well.
I think a dish like that calls for Augrautin Potatoes- boxed ones are really good!
Cook cabbage and add sauerkraut and sugar.

I was going to suggest applesauce, but it looks like you have the apples covered....some easy sides:
rice cooked in chicken broth, add-ins your choice
scalloped potatoes
green beans w/ lemon pepper or mushrooms
corn + kidney beans + lemon pepper
stuffing
green salad

Any steamed veggie would be good, especially yams. You could try sauerkraut as well. How about some type of rice dish or cous cous. (not sure of spelling) You could also buck tradition and go with a yummy winter soup.
fresh green beans with slithered almonds and fresh mushrooms in a light mushroom gravy.
Steam your green beans. Thinly slice onions and saute with fresh mushroom, diced. Add a small amount of milk, salt and pepper.mix green beans and almonds together with mixture in pan. mix a small amount of cornstarch and water well, then add to this dish as needed for thickening. Salt and pepper to taste.
this would be good with sweet potatoes or yams. fresh, frozen or canned ones would work. Mashed or buttered pieces. They will be great with the apples from your crock pot.
Besides the apples that are in the dish, I'd probably say a nice crescent roll or biscuit so that you can soak up the juices. I'd also probably pair that with green beans. That's always a good side with pork!

Brown rice with slivered almonds..very nice for a fall meal. Also, how about sweet potatoes? They're great. Add a salad and some corn, and you're done!

Another option - a pork roast in the crock pot is the way to start some fabulous BBQ pork sandwiches. Simply pull the pork apart when it's tender, add a cup of your favorite bbq sauce, and serve on buns with cole slaw or potato salad. Yum.....
