Plantain is very versatile. I use it all the times. Here are some of my take on them.

When green I cook it just like potatoes, peel off the green peel and cook it just until tender and mash it just like you would with the potatoes. You can eat it with bake chicken, grill fish or steak (as in steak and potatoe).

Make plantain chips. Wala! This take some preparation time. Peel green skin off and slice the plantain very thin and soak them for a bit. Afterward, drain and dry off and fry them as potatoes chips and season with salt.

Well, I don't want to give you too many of my secret away. Use it in cooking as you would with potatoes. Shh! This is way better than potatoes due to the potassium and other stuff found in the bananas. Also, it's easily digestable in our system.

Ripe plantain, you can slice them up diagnal angle and saute them in the skillet until brown and eat them with the main dish. It's sweet, warm and delicious.

Make dessert with them. Make batter and put ripe plantain in the batter and fry them up until golden brown. If you want to be fancy and special eat them with your favorite ice cream flavor sprinkled with nuts. Similar to a sundae, but fried.

Also, last but not least, bake them and enjoy them. I won't give this recipe away, but you got the idea. Yummy!

Plantains have to be cooked first. You can eat them when green, or when they turn yellow, but either way, have to be cooked.We eat tostones in our house. Peel green plantains, cut about 2"thick on a bias. Deep fry until slightly brown. (just a few minutes)Then drain on paper towels, place between 2 paper bags, and smash them down to flatten. Then return to oil and fry until golden. (about another 2 minutes)Season with salt as soon as they come out of the oil.

They can also be baked once they turn yellow in the oven with butter and brown sugar. They are soft and sweet this way.

all depends is the plantain green or is it yellow, if is green you can sliced and pan fry it ,with sliced avacado and some kind of white cheese, if is a yellow plantain you can eat it either raw or you also pan fry or even boil like a potato.

PLATANUTRES (PLANTAIN FRIED CHIPS)

6-7 green plantains
garlic powder
oil for frying

Peel and finely slice the plantains, deep frying until golden and crispy.
Remove from skillet and drain while the plantain is hot. Sprinkle with garlic powder or salt to taste.


CANDIED PLANTAINS

Belongs to the banana family.

2 lg. ripe plantains (all black)
3/4 stick butter
1 c. maple syrup
1 1/2 tsp. cinnamon

Melt butter in heavy aluminum or iron skillet. Add syrup and plantains. Sprinkle with 1/2 teaspoon cinnamon. Cook 5 minutes. Turn with an icing spatula. Sprinkle other 1/2 teaspoon cinnamon. Cook on low to medium heat until syrup forms soft ball, about 30 minutes. Turn frequently.
May be served as garnish for pork, chicken or turkey. May be varied by toasting bread and dipping in syrup for breakfast or lunch.

steamed...then eat with ginger sauce or garlic powder

You can boil them first. But I prefer to slice and fry them
