I'd add green peppers, jack cheese, jalapenos, onions, tomatoes...

But that's just me.

I think originally it was just potatoes and onions

Strictly speaking it should only contain onions and potatoes and a little salt,,

A traditional spanish omlette only has potatoes with the eggs, but the English version is full of any veg you can find.

A true "Spanish" omelet includes, diced green & red bell pepper, onion, chopped ham, Potato (optional), jack cheese, salt, a pinch of cayenne (red) pepper or hot sauce and eggs. Sprinkle with chopped celantro or parsely and serve.

Probably as many as you like - salsa, onions, olives, maybe ham. Make it up as you go along based on whatever you like. I don't think there's a hard and fast rule on these things:)

Do your own thing! Should be onions, garlic and onions. But who cares, add some chopped peppers, some tomato, maybe som parsley or coriander. Just don't forget to shout 'Olé' when you toss it.
