I make this turkey chili recipe that is no fail, pretty quick and easy, and hardly any fat.

The key is the seasoning mix. It is 1 part adobo, 1 part black pepper, 1 part cayenne pepper, 1 part chili powder, 1 part cumin & 1 part oregano. About 1 tbsp. each is enough for 1 pot.

Dice up 1 yellow onion and 1 bell pepper. Sautee this in a non stick pan you have lightly sprayed with pam with a sprinkle of your seasoning mix. As soon as the veggies take on a little bit of color remove this from the pan. In the same pan add 1 lb. of ground turkey breast. Season your meat. Let this cook until the bottom gets slightly browned, then begin to break it up. Add about 1/4 c. of chicken stock and let this simmer until it's throroughly cooked. Then add 2 cans of drained kidney beans, 1 large can of diced tomatoes, 1 - 2 chipotles in adobo (they are spicy so be careful) with a little bit of the sauce, 1 c. of chicken stock, 4 tbsp of the spice mix, a bay leaf and a sprig of thyme. Let this simmer for about 1/2 hour on low. Cilantro is a taste everyone doesn't like, I love it. As soon as you turn off the heat add about 1/4 c. fresh diced cilantro. If you start in a deep non stick pan you can make everything in one pot. This freezes really well.

With my leftovers of this I make a mexican pie. In a cake pan layer salsa, a tortilla, some of your chili, some mexicorn (or regular corn will work), some olives, and low fat cheddar cheese. Keep on doing this end with a tortilla topped with salsa. Bake at 350 covered for about 1/2 hour. It helps if you have a round cake pan, make sure you get the size, then you can get the tortillas to fit easier. Also with the olives and corn you just want a sprinkle, not a thick layer. Let it cool for about 10 minutes before you cut into it. Top with low fat sour cream you have mixed with cilantro and fresh lime juice.

Garden Pasta Salad

ingredients:
package (20 ounces) BUITONI Refrigerated Family Size Three Cheese Tortellini, prepared according to package directions, rinsed in cold water and drained


1 cup bottled fat free Italian salad dressing


2 cans (6 ounces each) tuna packed in water, drained and broken into chunks


2 medium tomatoes, chopped


2 cups broccoli florets


1/2 cup (1.5 ounces) BUITONI Refrigerated Freshly Shredded Parmesan Cheese

or BUITONI Refrigerated Freshly Shredded Romano Cheese

1 package (10 ounces) Italian-blend torn mixed salad greens

directions:

POUR dressing into large bowl. Add pasta, tuna, tomatoes*, broccoli and cheese; toss well to coat. Refrigerate or serve immediately over mixed greens. If desired, after chilling stir in a little more salad dressing to moisten pasta.

*NOTE: If refrigerating more than 4 hours, stir tomatoes into salad just before serving.

Try some vegetarian versions of your favourtie dishes. Vegetarian food can be very low fat and healthy.

For Thai try stir fry brocolli and cashew nut maybe some peppers(whatever you like), use flat rice noodles and your favourite thai sauce - try a jar of sweet chili sauce. you could try fried tofu or just add prawns?

For Mexican what about Bean and low fat cheese burritos?
