It depends on the fish- if it's a white fish, you should avoid potatoes or rice, as you'd then have two white foods together, and that's not visually appealing.
If you go with white fish, a green vegetable would be good, along with a (more seasonal) squash of some kind. The white with the green and orange would look good.
If you're going with a darker fish (salmon, for instance), potatoes or rice would be fine, along with the aforementioned green vegetable.

Serve it on a bed of rice, surrounded by stir fried
veggies.

You could use some asparagus or artichokes?

Personally, my favorite veggie to eat with a nice piece of fish is asparagus.

I like to oven-roast it.

Rub asparagus with a little olive oil, lay them on a cookie sheet, add some sea salt and cracked pepper, and bake for 10 min at 350.

AuGraten Potatoes and Asparagas or Broccoli.

french fries work every time

Fresh green beans and a sweet potato

coleslaw, hushpuppies and fries or a baked potato will go good with it.
