Is this chicken with a bone or without a bone? If with a bone you should bake in the oven at 350 degrees for an hour (cover with foil). Without the bone in you can bake it for 40 min at 350 degrees (again cover with foil). How you know that a chicken is done is that the juices will run clear when you cut into the thickest part of the chicken. So bake and check on it. You may want to dress up the chicken a little. Before baking, you can add a sauce to the chicken (like italian dressing), squeeze lemon and add basil, there are many ways to dress of the chicken.

As for the mashed potatoes.... peel the potatoes (4 potatoes will be plenty for the two of you), slice them (I slice that they are about 2-3 times the thickness of a quarter), put them in a pot with water covering over the potatoes, add a teaspoon of salt, boil on the stove top until the potatoes are soft (once boiling it should take about 10 minutes - if even that). After they are soft, drain the water from the potatoes, put the potatoes in the empty pot, add 2 tablespoons of butter, a few splashes of milk, and salt. Then MASH away! Don't mash too much or boil to long or the potatoes will be starchy.

To be honest with you I use a hand mixer for mashing. I also make my potatoes with some sour cream and cream cheese, but I just gave you the basics to get you started.

ask the guy in the meat department how to cook it.
or marinate the breasts for more than an hour. use marinate sauce to simmer chicken in large saucepan, for 45min to an hour.. . or go to foodtv.com

Fried Chicken or Girll Chicken Breast in garlic and butter

Heat up two table spoons of oil in a skillet, on med heat. Throw in chicken boobs (you can use seasoning on both sides if you want). Cook for about seven minutes on both sides with a lid on the pan (cut into the thickest part of the "boob" to make sure that it is done). Be sure to wash and trim the fat off the chicken before you cook it. Good luck!

Dust the breasts w/ flour and brown them in a skillet about 3-4 minutes on each side. Put them in an oven pan and pour your sauce over it. Put it in the oven that you turned on to 350 degrees when you started to brown the breasts. Check it every 10 min or so until the sauce gets hot (about 30 min approx.) If you want you can sprinkle salt & pepper over the breasts while they're browning in the skillet.
Peel & dice about 3-4 good sized potatoes into a largish saucepan. Boil them until they are tender to a fork poking them. Drain the water off into a sink, leaving the spuds in the pan. Toss in a half stick of butter, a good splash of milk, and some salt & pepper. Mash them up until they are the consistency you're looking for. If you start them to cooking about the time you start browning the breasts they should be ready to serve about the same time the finished entree comes out of the oven.

RINSE DA CHICK. SEASON WITH SPICES LIKE GARLIC SALT PEPPER, CHICKEN TEDERIZER, A LITTLE MORE PEPPER AND A PACKAGE OF CRUSHED PEPPER. LIKE THE ONE FOR PIZZA. JUST ONE SMALL BAG. AND LEMON PEPPER IF YOU HAVE IT. ADD A 1/4 CUP OF WATER AND COVER WITH ALUMINIUM FOIL PUT INTO PREHEATED OVEN AT 375' LET IT BAKE FOR 1HR TO 1HR AND 15 MINS. USE RICE (CHICKEN FLAVORED) NOT MASH POTATOES, CAUSE YOU MIGHT NOT KNOW HOW TO MAKE GRAVY.

If you want to spice the chicken up a little, put it in a baking dish, slice a few onions and lay them on top of the chicken, use some Toney's creole seasoning or Season Salt, cover with foil, and bake in a 350 degree oven for 1 hour.

Or you could pour some salsa on top and bake the same way. Either one taste really good and it's a little different!
