Smoking Venison?!


Question: Hey Guys,

I was wondering if you knew any tips for smoking venison. I have taken all the previous steps it is in the smoker right now I just put it in about an hour ago and I'm letting it sit at about 120 degrees right now until it is done. I have done this before and it has worked but I'm wondering if my temp is about right.

you know i dont really know about smoking in a smoker but what i do know is a great way to cook venison is in the ground dig a hole and fill it with coals hot coals and rap your venison in tin foil and put it in bury it and let it cook all day then get it out...best deer youll ever eat i sware

SMOKED DEER

Smoker Grill with Water Pan
1 qt. mustard
1/4 c. black pepper
1/8 c. salt or less
2 lbs. bacon
8-10 lbs. deer chunks (hand size or smaller)

Mix mustard, pepper and salt together. Add deer and mix thoroughly. Place deer on racks of smoker and wrap with bacon. Cook for approximately 3 hours. When done add barbecue sauce to sear for a little bite.
