A very lean finely minced or ground cooked beef (NOT hamburger) added to apple/raisin-based mincemeat is really good. Make sure to add enough liquid - a splash of liquor if you like it - to moisten the meat. When my Mother made it, she ground up all the fruit and meat together. It was delicious and I wish I had her recipe.
