You can use granulated, they'll just have a slightly coarser texture. Powdered sugar dissolves more easily, so shortbread cookies usually call for it. I always use granulated, since it's what I usually have on hand, and they come out just fine.

Also, you can toss the granulated sugar in your blender for a few minutes if you want it to be powdered sugar, it works well, but it's a hassle to pull out the blender IMHO, so I don't usually bother.

INGREDIENTS

* 2 cups butter, softened
* 1 cup white sugar
* 2 teaspoons vanilla extract
* 4 cups all-purpose flour


DIRECTIONS

1. Preheat oven to 350 degrees F (180 degrees C).
2. Cream butter and sugar until fluffy. Stir in vanilla; add flour and mix well.
3. Put through cookie press and form cookies onto baking sheets. Bake for 10 - 12 minutes.
