RECIPE INGREDIENTS:
Ripe persimmons (enough to make 2 cups of persimmon pulp)
3 cups milk
2 cups sugar
2 eggs
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract
Dash of cinnamon
1/2 cup chopped nuts (optional)
Whipped cream
1. Heat the oven to 350 degrees. Remove the skin and seeds from the persimmons and puree the pulp in a blender or food processor. In a large bowl, combine the pulp, milk, sugar, eggs, flour, baking soda, baking powder, vanilla extract, and cinnamon until well mixed. Stir in the chopped nuts, if desired. Pour the mixture into an ungreased 9- by 13-inch baking pan and bake for 70 minutes or until a knife inserted into the center comes out clean. Serve warm with whipped cream. Serves 8.

PERSIMMON PUDDING

1/2 c. butter
2 c. sugar
2 eggs
1 tsp. cinnamon
2 c. persimmon pulp
1 tsp. soda, dissolved in 1/4 c. hot water
1 tsp. baking powder
2 1/2 c. flour
3 c. milk

Cream butter and sugar. Add eggs; mix well. Add soda and water. Then add pulp, flour, baking powder, cinnamon and milk. Bake 1 1/2 hours at 350 degrees in 10 x 15 inch pan.

SAUCE:

1/2 c. sugar
1 c. warm water
1 tbsp. flour
1 1/2 tbsp. butter
1 tsp. vanilla
1/4 tsp. cinnamon

Mix sugar, flour and water; boil 5 minutes. Add butter, vanilla and cinnamon. Pour over baked pudding.

PERSIMMON PUDDING WITH SAUCE

2 c. persimmon pulp
2 c. sugar
2 eggs, beaten
1 1/2 c. flour
1 stick butter (1/2 to 1)
1 1/2 c. buttermilk
1 tsp. soda
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. baking powder
1/8 tsp. salt
1/4 c. cream

Mix sugar and pulp together. Mix soda in buttermilk then add all together. Bake at 350 degrees about 30 to 45 minutes.

SAUCE FOR TOPPING:

2 tbsp. flour
1 c. brown sugar
1/2 c. water
1/2 stick butter
Dash of cinnamon

Let come to a boil. Stir until cool. Pour over pudding. Use all this even if you bake a small pudding.
