I have all these eggs what should I make?!
Answers: I have four cartons of eggs. That is about 48 eggs I think. I need to make something with them or they will all go bad. Any good recipes for me to use?
You have a lot of good answers. If you do make the Angel Food Cake, you can take the yolks and make Bavarian Cream with the yolks. You can make your own Eclaires (the Bavarian cream is the filling for that and also the filling for Boston Cream Pies). Or use it over your Angelfood cake with some strawberries.
Eggs keep for MONTHS, not weeks. Depending on what you are going to use them for. They will lose a little of their height for whipping when they are old. If you just rotate the egg carton in your fridge - they will last a very long time. They will last longer still in the shell - raw - than in the shell hard boiled. By rotating the carton, I mean right side up, then up side down - that will keep the yolk from sticking to the sides of the egg thus keeping it longer.
I always make deviled eggs for Thanksgiving - my son requests it as does his wife and children. Same with Christmas.
You can even make Egg Flower Soup with your eggs. Here are some other ideas:
Fritatta: Onions, potatoes, mushrooms, bell peppers, cheese, eggs, either crumbled cooked bacon or cubed ham or sausage links - cut up, and black pepper with your eggs.
Here's a recipe that will use up 6 of your eggs and it's very easy to make. It is called Steam Bread and has the texture of a sponge (to look at it). It has a very nice flavor, doesn't need any frosting, and I haven't found anyone yet who doesn't like it.
You will need to have a steamer (one that has the upper portion like a double boiler only with the holes in it).
1 water glass of sugar
1 water glass of flour
6 eggs at room temperature
1 tsp vanilla
Whip eggs until they are very light in color. Add the sugar a tablespoonful at a time - beating it to mix in. Fold in the flour a tablespoonful at a time (using your mixer on the low setting. Add the vanilla and mix in. Line your steamer with cheesecloth (the ends will be hanging over the side of the steamer). Spoon your mixture into the steamer, fold the ends over the center of the cake, cover, and place over the boiling water. Cook for 1 hour. At the hour mark, open up the cheesecloth and look at it. If it still looks "wet", add another 10 minutes. Remove from heat, remove from the steamer by lifting it with the cheesecloth. Allow to cool 10 minutes and remove the cheesecloth. It looks like a bit circle of cheese with it high in the center. Just cut out a pie-shaped piece and enjoy.
You can make tapioca pudding, meringue for any fruit pie, macaroon cookies (which uses egg whites), 7-Minute Frosting for any cakes you make - tastes a little like melted marshmallows and looks like it.

Make something you can freeze or something to take to a shelter. egg salad, tuna salad, chicken salad. deviled eggs, egg custard, egg nog.
Takes a while for eggs to go bad.
Quiche may freeze well - lots of spinach quiche.
Omelettes for a very long time.
You could always donate them to a food bank.
Make egg salad or deviled eggs....Wow why do you have so many.......give them to your neighbors.

Eggs eggs eggs....oh so versatile. I use them at every meal. There is the obvious, scrambled, omlets. over-easy. Then you can make egg salad, deviled eggs. I like to poach some and serve them over linguine that has been tossed with some garlic, red pepper and Parmesan cheese. If you leave the middle runny, when you cut into them they make their own sauce. Get creative, they are cheap and eggsellent. (sorry, couldn't resist)
Well, eggs keep a long time...2-3 weeks or longer. Well, make up egg salad for sure. And cook up a bunch for hardboiled eggs, but these if peeled wont keep as long as the raw egg.
Keeping egg salad simple is the best rule of thumb.

You could make some angle food cake. One cake takes a whole dozen eggs.
Everyone is right eggs do keep for a LONG time, why not make deviled eggs for Thanksgiving next week(if you celebrate) But if you are really in a bind here's what my husband's uncle does, take 3-4 eggs at a time, put into a freezer bag and mix them up like you are making scrambled eggs w/o the milk. Then freeze them and use them in anything you need eggs for.
boil them and keep them in the refrigerator : u can eat them sliced up with some salt and pepper, u can can slice them up and put some ranche dressing on them and make a sandwich with pita break or just croissants,or take the yolks out of 4 eggs ( eat the whites) and crush the yolks in a bowl put some vinegar and put some olive oil and some lemon juice mix it together,that will be your salad dressing, so theres lot of options with eggs, they are good for you. When you have blisters on your lips or u feel weak, take them boiled eggs and eat 'em for two days, you will feel much better bcoz that was your vitamin. ;}
