I'm making spinach & chives dumplings (yum cha style) - but the spinach is bitter, what can I do?!

add a little sugar or honey to the spinach but just a little
Did you use fresh spiniach? If so try removing more of the stems or use baby spinach. You can also try adding a touch of honey to offset the bitterness.
