Does anyone have a good recipe for twice baked sweet potatoes?!
Answers: I saw a recipe in my local newspaper for twice baked sweet potatoes.It looked really good but it didn't say the exact ingredients.I am looking for one where you mix in maple syrup,and or cinnamon.
TWICE BAKED SWEET POTATOES
2 med. sweet potatoes
1 tbsp. maple syrup
1 tbsp. butter
1/4 tsp. cinnamon
2 tbsp. chopped pecans
Bake potatoes in 375 degree oven until tender. Cut a slice lengthwise from top of each potato. Scoop out inside and mix with syrup, butter and cinnamon. Spoon mixture back into shells. Cover and chill. When ready to serve, top potatoes with pecans and drizzle a little extra syrup over top. Bake, uncovered, in 375 degree oven for 25 minutes or microwave on high for 8 minutes. Serves 2.
doesn't have maple syrup or cinnamon but give a try
TWICE BAKED SWEET POTATOES
INGREDIENTS
6 sweet potatoes
2 tablespoons salad oil
1 (8 ounce) package cream cheese, softened
1/3 cup brown sugar
2 tablespoons margarine
1 tablespoon vanilla extract
3/4 teaspoon salt
1/2 teaspoon pepper
1/3 cup chopped walnuts
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Rub sweet potato skins with salad oil. Wrap potatoes in aluminum foil and bake in preheated oven for 1 hour, or until soft.
Meanwhile, in a large bowl combine cream cheese, brown sugar, margarine, vanilla, salt and pepper.
Cut potatoes in half and scoop flesh into the bowl with the other ingredients. Mix well and fold in walnuts. Spoon mixture into potato skins.
Bake for 5 minutes, or until heated through.
I don't have one for twice baked but I have one for whipped that is really good.
WHIPPED SWEET POTATOES
Ingredients:
24 oz sweet potatoes canned
4 oz butter unsalted
? cup maple syrup
1 teaspoon of ground cinnamon
1 teaspoon of ground nutmeg
? cup brown sugar
1 cup pineapples chopped
1 cup marshmallows
Non-stick cooking spray
Preparation:
1. Boil the sweet potatoes in its own juices with a little water until they are tender.
2. In a mixing bowl whip the potatoes while mixing in the butter, maple syrup, cinnamon, nutmeg, brown sugar and diced pineapples.
3. Spray a baking dish with non-stick cooking spray.
4. Preheat oven to 400 degrees F.
5. Put the potatoes in the baking dish and place in the oven for half an hour to finish cooking the whipped potatoes.
6. Top the dish with the marshmallows, and put back in the oven and let the marshmallows brown. This should take about 12 minutes.
7. Remove from the oven and let sit for 5 minutes before serving.
