I could only find an easy two layer cake....but it sounds really good.

Easy Pineapple Cake
1 package yellow or butter cake mix, 2-layer size
1 package (4 serving size) instant vanilla pudding mix
1 can (13 1/2 ounces or about 1 2/3 cups) crushed pineapple, undrained
1 package (2 ounces) Dream Whip whipped
topping mix, prepared according to package directions
PREPARATION:
Prepare and bake cake in two 8- or 9-inch layers, following cake mix package directions. Cool on rack for 10 minutes. Remove from pans.
In a bowl, stir pudding mix into crushed pineapple. Fold prepared whipped topping into the pineapple mixture.

Spread about 1 1/2 cups of the frosting mixture eon the bottom layer; top with the second cake layer. Frost sides of cake lightly then top cake with remaining frosting mixture. If desired, garnish cake with pineapple slices or chunks and maraschino cherries.
Chill until serving time and store leftovers in refrigerator

"Pineapple Cake"

Ingredients-
1 (18.25 ounce) package reduced fat yellow cake mix
1 (20 ounce) can crushed pineapple with juice
3 eggs


Preparation-
Preheat oven to 350 degrees F (175 degrees C). Spray a 9 x 13 inch pan with non-stick cooking spray.
Combine cake mix, pineapple (with juice), and eggs until well-mixed.
Pour into pan, and bake 30-35 minutes.

PINEAPPLE LAYER CAKE

2 1/4 c. sugar
3/4 c. milk
3 1/4 c. plain flour
Pinch of salt
2 tbsp. lemon
3/4 lb. butter
1 tsp. baking powder
6 eggs (save 2 whites for frosting)

Cream butter, sugar and salt together. Add all 6 eggs at once. Mix until fluffy. Add flour and baking powder. Mix well, then add milk and flavoring. This makes three 9 inch layers. Bake at 400 degrees for 20 minutes.

PINEAPPLE FILLING:

1 1/4 c. sugar
1 lg. can crushed pineapple
2 tbsp. plain flour
1 tbsp. butter

Drain pineapple. Mix sugar and flour with juice. Cook over low heat until thick. Add butter and pineapple. Let cool and spread on cake.
