How to make rolls like Ryan's or Sizzler?!


Question: Does anyone have a recipe for the big sweet soft yeast rolls like they put on your table at Ryan's Steakhouse or Sizzler? My family loves them, and I love to make breads, but don't have a recipe for anything like those.

Soft with a slight hint of honey--these yeast rolls will be a hit with your family and friends.

Ingredients:
6 Tbsp honey
6 Tbsp sugar
2 Tbsp instant potato flakes
1 cup room temperature water
1/2 tsp salt
1/4 cup butter, softened
3/4 cup warm water
3 Tbsp honey3 1/2 cup all-purpose flour
Method
Mix first five ingredients in a glass bowl or mixing cup. Cover with a towel and let stand for a few hours, or overnight in the fridge. In the bread machine (with dough only feature), put salt, flour, softened butter and warm water first, add yeast mixture. (Check mixture early in mixing process to see if more flour is needed, add extra flour until a smooth, pliable ball is formed). Using the dough only feature, let bread rise. Remove dough from pan and roll into rolls. Makes 2 pans of twelve rolls each. Let rise for 1 hour. Brush tops of rolls with egg and water mixture. Bake in oven at 375 degrees for 15-20 minutes or until rolls are a nice, golden brown.

Notes: It took a year of experimenting with the mixture to get a fluffy, sweet, buttery, honey-flavored yeast roll. My husband loves it so I call them HIS yeast rolls.

DINNER ROLLS

4 1/4 to 4 3/4 c. flour
1/2 c. lukewarm water
1 tsp. sugar
2 pkgs. dry yeast
3/4 c. lukewarm milk
1/4 c. sugar
1 tsp. salt
1/3 c. shortening
3 eggs

Soak yeast in warm water with one teaspoon sugar. Combine warm milk, sugar, and salt in a large bowl; stir to dissolve. Beat in shortening, eggs, yeast mixture, and 1 cup flour; beat until smooth. Add remaining flour; beat until smooth.
Turn onto lightly floured board and knead until smooth and elastic (5-10 minutes). Place in greased bowl. Grease top; cover and let rise in warm place until doubled (1 to 1 1/2 hours).

Punch down; shape into rolls. Bake at 375 degrees for 20-25 minutes. Yield 3 dozen rolls.
