What is a good desert to make for Thanksgiving ...not cake or pie?!
Answers: I am not a good cook.I would like to surprise my family with a really scrumptious dessert.

Ingredients
1 1/2 cups graham cracker crumbs
1/2 cup (1 stick) butter or margarine, melted
1 (14-ounce) can EAGLE BRAND? Sweetened Condensed Milk (NOT evaporated milk)
2 cups (12 ounces) semi-sweet chocolate chips
1 1/3 cups flaked coconut
1 cup chopped nuts
Instructions
Preheat oven to 350°F (325°F for glass dish). In small bowl, combine graham cracker crumbs and butter; mix well. Press crumb mixture firmly on bottom of 13X9-inch baking pan.
Pour EAGLE BRAND? evenly over crumb mixture. Layer evenly with remaining ingredients; press down firmly with fork.
Bake 25 minutes or until lightly browned. Cool. Cut into bars or diamonds. Store leftovers covered at room temperature.
Notes: Recipe Variations: Substitute chocolate chips or nuts with: candy coated pieces, dried cranberries, raisins, mini marshmallows or butterscotch chips.
Apple or peach cobbler: Mmmmmm.
Easy to serve different size servings and is a great leftover which some people like me enjoy for breakfast

pumpkin rolls ...pumpkin bread with cream cheese filling..so yummy!!you can yahoo it and punch in pumpkin rolls and get tons of recipes.

Tropical Fruit Salad
INGREDIENTS:
2 cups fresh pineapple
2 cups fresh cantaloupe
2 large, ripe mangoes, cubed
2 kiwifruit, sliced
2 medium navel oranges, peeled, pith and skin removed, cut into pieces
Juice of 1 small lemon
Juice of 1 small lime
1 tsp sugar
PREPARATION:
Combine pineapple, cantaloupe, mangoes, kiwifruit and orange pieces in a large bowl. Combine lemon juice and lime juice with sugar. Stir until sugar dissolves. Drizzle over fruit. Toss and refrigerate until ready to serve.

Orange-Pumpkin Pudding
4 slices whole-wheat bread
1/2 cup milk
1/2 cup orange juice
1/4 cup apple juice concentrate
2 eggs
1 banana, sliced
2 teaspoons cinnamon
1 cup cooked pumpkin
Dash of salt
Dice bread slices and crumble them
in a blender. Place the crumbs in square baking dish. Blend together
milk, orange juice and apple juice concentrate. Add eggs, banana
slices, cinnamon, pumpkin and salt and blend again. Add the mixture
to the bread crumbs. Stir together. Bake at 350 degrees F for 50
minutes. Serve slightly warm. Makes 8 servings.

Pumpkin Bread Pudding with Caramel Sauce
Pudding:
2 cups half and half
1 15 oz. can pure pumpkin
1 cup plus 2 tbsp. brown sugar
2 large eggs
1 1/2 tsp. pumpkin pie spice
1 1/2 tsp. cinnamon
1 1/2 tsp. vanilla
10 cups 1/2-inch cubes egg bread
1/2 cup golden raisins
Caramel Sauce:
1 1/2 cups dark brown sugar
1/2 cup (1 stick) butter
1/2 cup whipping cream
(There are many great caramel sauces in the store,
feel free to use a purchased sauce)
Powdered Sugar
For Bread Pudding: Preheat oven to 350. Whisk half and half, pumpkin, brown sugar, eggs,
pumpkin pie spice, cinnamon, and vanilla in a large bowl to blend. Fold in bread cubes. Stir in
raisins. Transfer mixture to a 11 x 7 glass baking dish. Let stand 15 minutes. Bake bread pudding
until tester inserted into the center comes out clean, about 40 minutes.
For Caramel Sauce: While the bread pudding is baking whisk brown sugar and butter in a
heavy medium saucepan over medium heat until butter melts. Whisk in cream and stir until
sugar dissolves and sauce is smooth, about 3 minutes.
Sift powdered sugar over pudding. Serve warm with caramel sauce.
7 Layer Bars or brownies.
Pumpkin cheesecake. I don't have the recipe handy, but I'd get on Google... there are soooo many wonderful recipes, and so many that are easy to make, but can wow 'em. Try http://www.allrecipes.com
My Mother-in-law made a very good yet simple dessert last year!
Ingredients:
Canned Pumpkin (NOT PIE MIX)
Angel Food Cake or Pound Cake
Bailey's Irish Cream
Cool Whip Topping/Whipped Cream (either is good)
This is a layered dessert so it is best to use a Trifle bowl.
Layer CUBED pieces of cake
Spoon Pumpkin Over cake
Spoon Bailey's over Pumpkin
SMOOTHER with whipped topping
REPEAT!!!!! Until bowl is full. Make sure you don't put a solid layer of Pumpkin or Bailey's as it will make the cake soggy!
Also, you can make a great fruit dip using Pumpkin (canned again) with a block of cream cheese. Just mix and eat. (You can add vanilla flavoring, nutmeg, cinnamon to taste also)

You can sub any fruit .... cherry pie filling is also good !
I Fall to Peaches Cobbler
1/2 C. melted butter
1 C. all purpose flour
1 tsp baking powder
1 tsp baking soda
1 C. sugar
1 C. whole milk
1 ( 21 oz) peach pie filling
Preheat oven to 350
Place butter in 13 x 9 pan
Combine flour and next 3 ingredients; stir in milk. Pour this batter over the butter,
Spoon pie filling over batter... do not stir
Bake at 350 for 35 minutes
