Question: what is the difference between english walnuts and regular wallnuts??
if a recipe calls for english wallnuts and you get regular can it still work ?

Most walnuts you can buy are English walnuts. There are Black walnuts also, but they are not often seen in stores except maybe in icecream toppings and flavorings.

Walnut meats naturally come in different shades, from the extra light to darker amber colors. This is part of nature! Several factors contribute to these differences. But, you will find dark and light walnuts on the same tree or in the same orchard. In general, commercial bakeries prefer the lighter shades because their appearance is often more desirable. On the other hand, ice cream companies prefer the dark shades because they often have a more intense flavor.

Black walnuts have a much fuller bodied taste, but are a PISTOL to shell. English are very easy to shell, but are lighter in taste. You can substitute black for English, but the taste will be different.

The English walnut is the most common one you find in stores with the light brown shell. There's also black walnuts (which has a strong, deep flavor) but most of the commercially produced varieties like in bags are hybrids of English walnuts.
