If you are set on graham cracker crust, make the cheesecake; a pre-made pastry shell would work beautifully for the pumpkin pie. The filling for a regular pumpkin pie would soak into the crust and make it a soggy mess on the bottom before it "set" while baking (or, it might even float up to the top). This doesn't happen with cheesecake because the batter is considerably thicker than the custard of a regular pumpkin pie.

Pumpkin cheesecake =yumness

In a graham cracker crust, definitely the cheesecake.

go with the old school regular pumpkin pie...

whichever you choose, the crust will taste good and shouldn't burn
