This is my favorite meal. I serve it over Ziti macaroni and top it with lots of Parmesan-Romano cheese. (It's absolutely delicious!) Add a green salad and some buttery garlic bread for a complete meal.

CAROL’S MEATBALLS AND SAUCE

SAUCE:

3/4 c. chopped onion
3 tbsp. salad oil
2 1lb. cans Italian tomatoes
2 6 oz. cans tomato paste
2 c. water
1-1/2 tsp. dried oregano
2 tsp. dried parsley
2 cloves garlic, chopped
1-1/2 tsp. salt
pepper to taste

In Dutch oven, saute onions and garlic in hot oil until tender. Add remaining ingredients. Stir well. Add meatballs. Simmer for 3 hours. Stir often. Add more water if sauce becomes too thick.

MEATBALLS:

2 slices day-old bread
milk
2 lbs. hamburger
2 eggs
1/2 c. Romano cheese
2 tbsp. dried parsley
1 tsp. oregano
1 tsp. salt
1/2 tsp. pepper

Soak bread in milk 2 to 3 minutes. Squeeze out extra milk and tear into small pieces. Mix well with meat and remaining ingredients. Shape into 2 " balls. Drop the meatballs into the spaghetti sauce and cook.

Note: the bread and eggs keep the meatballs from falling apart.

This is my favorite when I'm having people over or have to bring a dish somewhere. It's easy and delicious. People always think you've worked way harder then you have!

Italian Shredded Beef
Ingredients:
3-6 lb. roast (a pot roast works well)
1 envelope Au Jus gravy mix
1 envelope Good Seasons Italian Dressing

Put the roast in a slow-cooker (or roasting pan if you don't have a slow cooker) Mix Au Jus mix and dressing mix in a bowl w/2 cups water (4cups if your doing it in the oven). Pour over roast. Cover cook on low for 8 hrs. (about 250 in the oven for about 6 hrs.) Take the roast out and put it on a large plate. Using 2 forks shred the meat apart. But back in the slow-cooker. Serve on hard rolls or buns.

Hi there. I just tried making Chicken Marsala for the first time last night. Marsala is really cheap at the liquor store, and the recipe was excellent! I will e-mail it to you in just a sec.

CHICKEN CUTLETS

1 pint of cooked chicken, coarsely chopped
1 cup heavy cream
3 tablespoons butter
1 tablespoon flour
1 teaspoon salt
4 tablespoons mushrooms, finely chopped
4 eggs
2 cups bread crumbs
1/4 teaspoon Bell seasoning or powdered sage
1/2 teaspoon pepper
1/2 teaspoon onion juice or onion powder
1 teaspoon parsley, chopped

Combine chicken with salt, Bell's seasoning or sage, pepper, onion juice or powder, lemon juice, and chopped mushrooms; put the cream on the stove in a large skillet; beat the flour and butter together until smooth and light, and when the cream begins to boil, stir this into it; stirring constantly until the sauce boils again.
Add the seasoned chicken and cook for three minutes; beat two of the eggs until light and stir them into the boiling ingredients.

Remove from heat immediately and pour into a flat dish, to cool in the refrigerator for an hour or so.

Butter a cutlet mould or hamburger press thoroughly and sprinkle some crumbs into it; pack with the chicken, and then give the press a tap on the table to make the cutlet drop out. The press is buttered only once, but is sprinkled with crumbs each time a new cutlet is formed. When all the chicken has been used, beat the two remaining eggs in a deep plate and put some of the crumbs in another plate.

Drop the cutlets into the eggs first, and then into the crumbs. At serving time put them into a deep fryer, at about 360 degrees, and being careful not to crowd them, fry for two minutes.

Drain well on paper towels and serve with mushroom or Bechamel sauce.

*Form with the hands if you don't have a mould, hamburger press or meatball scoop.

Its from paula dean but I modified it a bit.

3 cups of cooked chicken (I debone a rotisserie chicken)
1 can of cream of celery soup
1 cup mayo
1 cup cheese (sharp cheddar)
2 cans of greenbeans rinsed and drained
1 med. onion chopped and sauteed
1 can watered chestnuts, chopped
1 box 6 oz of Long grain wild rice (uncle bens)
some more cheese for top
crispy onions (like frenches in a can) for the top

Preheat oven to 350. Mix all of the ingredients in a bowl then put it into a caserole dish. Top with some more cheese and the crispy onions. Bake for about 20-30 min and serve.

THIS IS ABSOLUTELY DELICIOUS!

Ham boil

In a slow cooker or roaster put the shank of a ham and let it boil once it boils add cabbage, potatoes and baby carrots cook until tender. Very easy and very tasty.
