Crunchy Caramel Apple Pie
Prep: 30 minutes
Bake: 50 minutes
Cool: 4 hours
Stand: 4 hours
Ingredients
Pastry for Single-Crust Pie (see below)
1/2 cup sugar
3 Tbsp. all-purpose flour
1 tsp. ground cinnamon
1/8 tsp. salt
6 cups thinly sliced, peeled cooking apples
1 recipe Crumb Topping
1/2 cup chopped pecans
1/4 cup caramel ice-cream topping
Directions
1. Preheat oven to 375 degrees F. Prepare Pastry for Single-Crust Pie. On a lightly floured surface, roll out dough to a 12-inch circle. Transfer pastry to a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch pastry. Trim; crimp edge as desired.
2. For filling: In a large mixing bowl stir together sugar, flour, cinnamon, and salt. Add apple slices and gently toss until coated. Transfer apple mixture to the pastry-lined pie plate. Sprinkle with Crumb Topping. To prevent overbrowning, cover edge of pie with foil.
3. Bake for 25 minutes. Remove foil. Bake for 25 to 30 minutes more or until top is golden. Remove from oven; sprinkle pie with pecans, then drizzle with caramel topping. Cool on a wire rack. Makes 8 servings.
4. Pastry for Single-Crust Pie: In a bowl stir together 1-1/4 cups all-purpose flour and 1/4 teaspoon salt. Using a pastry blender, cut in 1/3 cup shortening until pieces are pea-size. Using 4 to 5 tablespoons cold water total, sprinkle 1 tablespoon of water at a time over the flour mixture, tossing with a fork until all of the dough is moistened. Form dough into a ball.
5. Crumb Topping: Stir together 1 cup packed brown sugar, 1/2 cup all-purpose flour, and 1/2 cup quick-cooking rolled oats. Using a pastry blender, cut in 1/2 cup butter or margarine until the topping mixture resembles coarse crumbs.
This pie can be made using a single crust and then topping with a crumb mixture.
Deep-Dish Apple Pie
8 servings
Prep: 30 minutes
Bake: 40 minutes
Ingredients
6 cups thinly sliced, peeled cooking apples (about 2 pounds total)
1/4 cup sugar
1 teaspoon ground cinnamon
1 tablespoon cornstarch
1/8 teaspoon salt
3/4 cup all-purpose flour or 1/2 cup all-purpose flour plus 1/4 cup whole wheat flour
Dash ground nutmeg
3 tablespoons butter or margarine
2 to 3 tablespoons cold water
Fat-free milk
Frozen vanilla yogurt (optional)
Directions
1. Place apples in a 2-quart square baking dish.
2. In a small bowl combine sugar and cinnamon; set aside 1 teaspoon of the mixture. Stir the cornstarch and salt into the remaining sugar mixture; sprinkle evenly over the apples in the baking dish.
3. In a medium bowl stir together the flour and nutmeg. Using a pastry blender, cut in butter until pieces are pea-size. Sprinkle 1 tablespoon of the water over part of the flour mixture; gently toss with a fork. Push moistened dough to side of bowl. Repeat, using 1 tablespoon at a time, until all the flour mixture is moistened. Form into a ball.
4. On a lightly floured surface, slightly flatten dough. Roll dough from center to edges into a 10-inch square. Cut decorative vents in pastry. Carefully place pastry over apples. Using the tines of a fork, press edges to sides of dish. Brush pastry with milk and sprinkle with the reserved sugar mixture.
5. Bake in a 375 degree F oven about 40 minutes or until the apples are tender and the crust is golden. Serve warm. If desired, serve with frozen yogurt. Makes 8 servings.
Crumb Topping: Stir together 1 cup packed brown sugar, 1/2 cup all-purpose flour, and 1/2 cup quick-cooking rolled oats. Using a pastry blender, cut in 1/2 cup butter or margarine until the topping mixture resembles coarse crumbs.
Apple Pie With Crumb Topping
2/3 cup sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
8 tart apples, cored, peeled, and thinly sliced (6 cups)
1 9-inch unbaked pie crust (can use a frozen pie crust)
1/2 cup all-purpose flour
1/4 cup sugar
1/4 cup butter or margarine
PREPARATION:
Put sliced apples into a large bowl. In a small bowl, mix first three ingredients. Stir this mixture into the apple slices. Put this apple mixture into the pie shell.
Combine the remaining flour and sugar in a small bowl. Using a fork or pastry cutter, add the butter or margarine until the mixture is very crumbly. Sprinkle this over the apples.
Bake uncovered at 400 degrees for about 45 minutes. If the pie crust is browning too quickly, cover the edge with foil. Let cool, or this pie can be served warm, if desired.
This doesn't have crumb topping, but it is so high rated, I thaught you can change the topping, or maybe you might try it the way it is ...

"Grandmas from all around can be proud of this unique recipe that brings fabulous results. Sliced apples are mounded in a prepared pie shell, covered with a latticed crust, and just before slipping into the oven, doused with a sugary butter syrup."
