Boil them till soft in salted water. They are great in soups. I like adding butter beans to tomato soup!
There's more than one way to cook dried beans???
Well, that sure is news to me. I've always soaked them overnight and then boiled them for 30-60 minutes (depending on the type of bean) the next day, just like grandma did.
Sometimes I soak and sometimes I don't.
But I always use a packet or two of GOYA Seasoning in mine with a little bit o oil. You can get GOYA in the ethnic section of the store, brown box, pink pig on it.
I don't have a pressure cooker, so I let them boil for an hour, then soak overnight. In the morning I dump the water, rinse and refill the water.
In the morning I dump the water it's been sitting in, rinse and refill. I let them boil for at least half an hour without any spices or salt. I dump the water out again, rinse and boil, this time with spices.
The reason I don't add salt until the end is because it prevents the beans from softening. Also, changing out the water often helps get rid of whatever's in the beans that causes gas.
My husband picks thru them to get any rocks out. He puts them in the crock pot with enough water to cover, and adds molasses, brown sugar, dry mustard, pepper, salt pork and sometimes ketchup. No specific amounts...just some of this and some of that. He starts it out on high for 3-4 hours, then puts in on low for another few hours. Just cook until desired tenderness. Every time it comes out just a bit different, depending on how much of any one thing he adds. YUMMY!
It depends on the type of bean.
Most say to soak overnight, or 3-4 hours, then dump water.
The more you soak them, the less cooking time needed.
