yea. sushi tuna is the best. its very lean and deep red color. i don't know mch about cooking tuna, never heard of it.

YES! The taste and texture are very different. Look for reliable markets with truly fresh fish. Grilled tuna steaks are easy to prepare and incredibly good.

To cook or grill it certainly the fresh one but for salads/sandwiches I prefer the canned one.

Fresh is Better. This is what you look for:

Fresh yellowfin is hard to beat. However, if you have ever had real Italian tuna that was canned (actually jarred), it is a fabulous product. Were not talking starkist here. If you can ever find it (and again, don't buy it from a can), buy it to try.

Fresh is always better for you than processed. However that can depend on the cook also! Blue fin tuna is my preference, but depends on your location. Most people these days can only think of it served raw and Japanese style, but this is not "better for you", than cooked, it is a preference only. Some people have real difficulties eating any raw food. In fact, marinating and marinades, are actually a form of cooking.

Cooking by definition is altering the chemical and physiological structure of food. Acetic and citrus acid will do this just as well as heat. Most tuna is so expensive, that the average person will only ever buy it in portions.

Always choose lighter coloured flesh, no sticky sensation and little if any odour. Ask for a fresh cut portion, and never purchase it packaged (a fair sign it was intended to last a few days. I always hand pick my portion) The most popular portion is the fillet from the lateral region. Steaks are fine but should be cheaper than the sushi style fillet.

Fresh is always better, of course... The sashimi type. Fatty tuna, light pink colour.
