Fried glazed yams, anyone?!


Question: Years ago, my mother in law would fix yams in the skillet. She would slice them, and put sugar and some other spices on them, I think maybe using an oil to fry. Are they precooked or not? When they were finished there was a crunchy sweet glaze on them. They were sliced like you would slice fried potatoes, maybe a little bit thicker. I need to know how to make the recipe. Anyone ever fixed yams this way, that can help me?

Home Fried Yams

4 medium yams, peeled
1 quart water
1/2 teaspoon salt
4 tablespoons butter
2 tablespoons sugar

Cut yams into 1" thick slices.
Combine water and salt,soak yam slices for 30 minutes.
Remove from water and drain and pat dry.
Melt butter in large skillet,add yams,brown quickly on both sides.
Sprinkle with sugar,stir gently to coat both sides.
Cover,reduce heat to low,simmer 15-20 minutes or until fork tender.

awwwww, sounds to complicated

You would probably slice them somewhat thin so that they cook all the way through. I think I know what you're talking about, basically the brown sugar topping turns into a glaze and makes for a crispy topping. Don't forget the butter!
