To prevent gooey, runny pecan pies, add 1 Tbsp. or cornmeal to any recipe. :-D


Moma Sara’s Pecan Pie
Mix these together:
? C sugar
1 T Flour
1 t salt
1 C corn syrup

Now mix these together and add to above mixture:
2 eggs w/
? cup Evaporated Milk
1 tsp. vanilla
1-2 cups pecans

Pour in a deep dish pie crust (or make 1 ? recipes and make 2 regular pies.) Bake at 375oF until firm.

LOU’S PECAN PIE
MAKES TWO PIES

WARNING ! ! ! ! You an overdose on this pie.
ANTIDOTE: Administer one thin slice per hour.

1 ? C Sugar
2 T flour
? C White Karo Syrup
? C dark Karo Syrup
4 Eggs (Beaten by hand)
2 t Vanilla
2 T Melted Butter
2 C Pecans (Whole if small….Chopped if large)
2 C Pecan Meal

Put it all together and place in a pie shell. Bake at 400°F for 15 minutes, reduce over to 350°F and bake for 30 more minutes.

This is Paula Deen's recipe... I've used both Jack Daniels and Southern Comfort (which isn't bourbon) - both turned out great. It's super easy to make too! I brought one to a potluck last Friday and it was the first thing gone. Everyone loved it :)

1 cup sugar
3 tablespoons butter, melted
1/2 cup dark corn syrup
3 large eggs, beaten
1 1/2 to 2 cups pecan halves
2 tablespoons good-quality bourbon
1 (9-inch) deep-dish pie shell, unbaked

Preheat the oven to 375 degrees F.

In a medium bowl, stir together the sugar and melted butter. Add the corn syrup, eggs, pecans, and bourbon, and stir until all ingredients are combined. Pour mixture into an unbaked pie shell, and place on a heavy-duty cookie sheet. Bake for 10 minutes. Lower the oven temperature to 350 degrees F, and continue to bake for an additional 25 minutes, or until pie is set. Remove from oven and cool on a wire rack.

Darling, the recipe on the back of Karo's Dark Corn Syrup is simple and foolproof - guaranteed. It may not be particularly "unique", but it always works!

This one is good, less sweet than most, and is not too gooey- but if you want even less gooey- add another egg.


Pecan Pie
2 eggs, slightly beaten
1 cup light corn syrup
1/4 cup brown sugar
1 Tbsp molasses
2 Tbsp melted butter
2 Tbsp flour
1/4 teaspoon salt
1 teaspoon vanilla
1 1/4 cups pecans, coarsely chopped

1 9-inch pie shell, chilled for an hour if freshly made, defrosted for 10 minutes if frozen. (See pie crust recipes.)

1 Preheat oven to 375°F. Spread pecans along the bottom of the pie shell. Mix the remaining ingredients and pour over pecans. The pecans will rise to the surface of the pie.

2 Bake at 375°F for 45-50 minutes until the filling has set. About 20 minutes into the cooking you may want to use a pie crust protector, or tent the edges of the pie crust with aluminum foil to prevent the pie crust edges from burning.

3 Remove from oven and let cool completely.

SOUTHERN PECAN PIE

1 c. sugar
1/2 c. dark Karo syrup
1/4 c. butter
3 eggs, well beaten
1 c. pecans
1 unbaked 9" pie shell

Combine sugar, syrup and melted butter. Add beaten eggs and pecans to syrup mixture, mixing thoroughly. Pour filling into unbaked pie shell. Bake in 375 degree oven for 40-45 minutes.
