I have alot of red potato's left from my garden. What can i do with them other than make more mashed taters?!

Frech fries, chips with different seasonings, roasting them is great too. potato bread there are tons of recipes if you just google red potato recipes. these are just a few of the ways i make them.

Potato Salad
Roasted red potatoes (make it with lipton onion dry soup mix and some oil in the oven)

search a recipie for red bliss potato salad - i'm not sure of the exact recipie but it has bacon and oil and vinegar and its almost like a warm german potato salad, but its really good

potatoe salad and cut them up and pan fry them. or make rosemary roasted potatoes.

Wash and slice them, boil them, them fry with some onions. Mmmmm.
Or freeze the boiled slices to take out and fry later.

roast them, chip them, make potatoe salad, make fish cakes, my hash browns or potatoe rostis, use them in stews or soups, top minced lamb and onion for a shepards pie, make corned beef and potatoe pie

Saute them in a frying pan with a little bit of olive oil, and garlic and dill....my mom used to make them all the time and they were my favorite.

Dice into bite size pieces with skins on, boil until tender, drain. Melt butter, add parsley, salt & pepper. Then pour over potatoes.

BUTTERED PARSLEY POTATOES

You can make potatoe chips out of them.

Breakfast potatoes. Quarter them up and fry them in a pan with oil Yum. Add salt and pepper, even other sorts of seasoning. Great for reheating later.

I would make frozen hash browns out of them....just boil a pot of water, cook the taters 1/2 way, then shred them up, and bag them....then when you want to make has browns just thaw them out and cook them.

Roasted Red Potatoes

Take the potatoes and wash them, pat dry and peel the middle around all of them leaving the skins on both ends of all. Drench with olive oil, garlic and rosemary. Use your hands to incorporate all the ingredients on each potato and put them on a baking sheet and bake @ 350 for about 30 - 45 minutes until tender. Beautiful presentation and great flavor.

Potato & Sausage Soup

6 slices of bacon cooked, drained and crumbled
1 lb. sausage (breakfast)
1 sweet onion chopped
3 stalks celery chopped
1 large can of chicken stock
10-12 red potatoes sliced
1 pint heavy cream
1 bunch kale or 1 bag small spinach
Salt and pepper to taste

Cook bacon, drain, set aside crumbled. In drippings combine sausage, onion and celery and cook until done, drain. Add chicken broth and potatoes. Simmer 20 minutes. Add heavy cream and kale/spinach and crumbled bacon. Salt and pepper to taste and serve with crusty bread for dipping!

Dill Potato Salad

Red potatoes, chopped and cooked until tender, drain. Add mayonnaise, chopped sweet onion and fresh dill weed. Salt and pepper to taste and enjoy.

Mashed Potato/Cauliflower

Mash some up with cauliflower and make mashed potatoes. Healthy and you will get the antioxidant of the cauliflower along with the vitamins in the red potatoes. Once you have pureed the cauliflower in the food processor and made it smooth whip in those potatoes with some sour cream and butter, salt and pepper to taste and serve. They will never know!

Potato Pancakes

Always good and better with a dollop of sour cream on top!
Cook the potatoes and mash, add salt and pepper and some seasoned bread crumbs along with flour. Combine with a couple of eggs beaten and fry in just enough oil to coat the bottom of the pan. Even better if you add some chives to them before frying!

Breakfast Casserole

Diced the potatoes and add them to a bowl, crumbled in uncooked breakfast sausage, chopped sweet onion, green and red peppers, a couple of beaten eggs, grated cheeses and Bisquick. Place in a casserole dish sprayed with non-stick spray and place it in the oven @ 350 for about 45 minute or until sausage has cooked through. Serve with buttered biscuits or toast. Come up with your own measurements depedning on the size you are making.

I boil them, drain well, and then toss with sour cream, butter, and dill. You can also cook them and let them cool. Then slice and pan fry in some butter and parsley. And they are always a nice addition to soup.
