Why are Onions and Ginger so important?!

Question: In recipes why are those two especially Onions always included as ingredients? What's so great about them and are they really necessary?

I am a former chef and for all of the qoute aromatics, onions, garlic, ginger and hot peppers plus spice and herb, it is strictly a flavour and aroma matter, you can omit them if do not like them or are allergic, but the flavours will be muted.

I like to use lots of them as I like the flavour of all of them, and as a diabetic and needing to eliminate fat from my diet, those particular things add flavours with out the fat. It is all a matter of taste, some like them other don't, you have to choose whether tey are included in you cooking or not, but when eating out it is harder or in processed foods.

It is generally the flavor. My hubby doesn't like onions and often omit it from recipes.

well, to me, it gives a nice aroma...i usually use ginger to get rid of the smell of chicken or fish

ginger has got medicinal quality to make digestion easier

onion although it is added for flavour it is good for heart.
