Creamy Irish Potato Soup
From: Campbell's Kitchen
Prep: 10 minutes
Cook: 25 minutes

Serves: 5
Potatoes, celery and green onions simmer to tenderness in chicken broth, and are blended together with milk to create a rich and creamy soup.

Ingredients:
2 tbsp. butter
4 medium green onions, sliced (about 1/2 cup)
1 stalk celery, sliced (about 1/2 cup)
1 3/4 cups Swanson? Chicken Broth OR Natural Goodness? or Certified Organic Chicken Broth
1/8 tsp. ground black pepper
3 medium potatoes, sliced 1/4-inch thick (about 3 cups)
1 1/2 cups milk

Directions:

HEAT butter in saucepan. Add onions and celery and cook until tender.

ADD broth, black pepper and potatoes. Heat to a boil. Cover and cook over low heat 15 min. or until potatoes are tender.

PLACE half the broth mixture and half the milk in blender or food processor. Cover and blend until smooth. Repeat with remaining broth mixture and remaining milk. Return to saucepan. Heat through.

Easy Potato and Sausage Soup

6 pieces of bacon cooked, drained and crumbled
1 pound of breakfast sausage
1 sweet onion chopped
3 stalks celery chopped
1 large can chicken broth
5-6 medium size potatoes sliced
1 bunch of kale or 1 bag of baby spinach
1 pint heavy cream
Salt and pepper to taste

Cook bacon, drain, crumble set aside. Cook sausage, onion and celery in bacon drippings and drain. Add large can of chicken broth and potatoes. Cook 20 minutes and add kale or baby spinach along with bacon and salt and pepper. Stir in heavy cream.

Serve with crusty bread for dipping!

This is the same soup they serve at Olive Garden and is wonderful. A meal in one pot!

Shame you don't get along enough to even ask for a recipe. Maybe if you did ask it might break the ice and you could go from there and start anew.

Chop up one onion, peel and cube your potatos, add chicken broth and enough water to cover your potatos. cook until pots are done. Add butter, Mix some corn starch according to directions with milk. Add milk to cover the potatos , when heated hot, add the cornstarch thickener and stir . You will have to add or take away, depending on how much you make. Salt and white pepper to taste.
