Answers: I know how to do risotto and fried rice, but is there anything else thats quick and easy?
When I make too much rice.
Next day, I add a tin or two of tuna, some tomato onion and greenpepper.
A bit of mayo, and my family love it.

I would get some white rice and mix it with a little pesto and some sun dried tomatoes. Add any seasonings you see fit to this dish. Then I would stuff it into raviolis, and then put alfredo sauce on top of that. That there is good. I'm hungry now.
Yes, there are a few ways of cooking it.
1) You can put tamarind and a little bit and tumeric and it becomes tamarind rice. If you like it spicy you can fry a little dried chilly and fry it together with the tamarind rice.
2) You can put black sugar and cook it with the rice with raisins, and cashewnuts. This is sweet rice.
3) You can also add milk and sugar with the rice and this is milk rice.
4) If you like coconut milk, you can add this with rice when you are cooking it and a pinch of salt. This rice should be eaten a spicy anchovies sauce. delicious!
I've tried all these because once a year on a special day my mother in law makes all these and we all love it.
Apple-Raisin Rice Dessert
INGREDIENTS:
2 1/4 cups water
1 cup sugar
3 cups sliced peeled tart apples
3 tablespoons lemon juice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 cups cooked long-grain rice
1/2 cup raisins
7 1/2 teaspoons butter or stick margarine
2 teaspoons vanilla extract
10 tablespoons reduced-fat whipped topping
DIRECTIONS:
In a large saucepan, bring water to a boil; add sugar. Cook and stir until sugar is dissolved. Stir in the apples, lemon juice and spices. Reduce heat; simmer for 3-5 minutes or until apples are tender. Stir in rice, raisins, butter and vanilla.
Pour into a 2-qt. baking dish coated with nonstick cooking spray. Bake, uncovered, at 350 degrees F for 50-55 minutes or until liquid is absorbed. Let stand for 10 minutes before serving. Garnish each serving with whipped topping. Serve warm.

oh theres tons of ways to do rice this is just the tip of the iceberg so to speak. Ive done rice salads, pilafs with brown, wild and standard white rices. Basicly steam the rice of your choice and add your favorite salad dressings, sauted veggies, add pork sausage to it for a more meaty dish or ground turkey or kilbasa. To better flavor your rice naturally instead of using water use beef, chicken, or veggie broth omg its yummy. I have also done an italian rice salad, it had chunks of albacore tuna" from the pouch" green, red, yellow and orange peppers small diced, red onion, italian stewed tomatoes with out the juice, sundried tomatoes are great too. Different olives, chopped up pepperoni bits, chunks of my families favorite cheeses. the list goes on. take a day and just test recipes you develop from these ideas. Thats the fun part lest for me. Try my Tuna Upside Down Rice Dish.
Brown one medium sized chopped onion with a little garlic and 3 piece of bay leaves.
Add a chunky can of Tuna ( in water).
Stir for a minute or so, add 1/4 teaspoon of tumeric, 1/4 mild curry powder, little salt and pepper to taste. leave for a couple of more minutes. Then leave aside off the cooker.
Boil 2-4 cups of rice ( depends on how many are eating) in some salt and drain.
Take the rice and place atop the tuna mixture.
Don't mix. Just pat it down with a spoon. Leave in oven for 10 minutes on a rack at lowest as possible but not touching the bottom of oven directly.
To serve:
Empty pan upside down on big round plate, it should come out with all the tuna mixture on top.. really impressive. I do this dish many times, it is very nice. Top with a sprig of parsley and decorate the rim opf dish with lemon slices.
Serve with okra or bean side dishes.
