How do you soften ice-cream (to make it spreadable) w/o melting it or risking food poisoning?!

I just let it sit on the counter for a bit until it starts to look glossy and then use a spade or spatula to get it onto the frozen cake as evenly as possible then use a spatula to smooth it and make it even with the sides and to level the top area. It'll soften a little as you work. If your cake is fresh it'll likely tear and crumble. Microwave is tricky as it may melt in one area and be too firm in the middle. You can also beat the ice cream with a paddle attachment on a stand mixer to make the ice cream spreadable. Food poisoning isn't really an issue till the ice cream is completely melted and sat out for a long time.

microwave sloooooowly on low power for 30 seconds. OR let it sit at room temp for 10 min. OR beat it with an electric mixer. food poisoning won't be a problem unless you leave it out for more than three hours.

you'll have to melt it a bit, microwave it on low-med heat, work quickly, and re-freeze asap, you don't have to worry about food poisoning for a few hours

bidda microwave, bidda 70 maybe 80 seconds? bidda slow roast in't oven? Or you could alternitavley blow on it.
