Rice with tomatoes and spinach.

saute onions, garlic and spinach in olive oil with salt and pepper. Add a can of chopped tomatoes and simmer for 10 minutes. Stir in cooked rice and cook for another 5 minutes to allow the rice to absorb the flavors.

Peas
Tomato / watercress
Mint sauce

Stuffed Lamb chops??
Slit each lamb chop
Salt and pepper to taste
insert prepared stuffing (stove top variety)
Brown each side
Place in oven at 375 for 20-30 minutes...
Done.

Make a gravy, not too thick and add 2 teaspoons of redcurrent jelly or cranberry jelly to this. Then put chops in a casserole dish with some chopped carrots half a chopped onion (and some mushrooms too if you like them ) . Also add two sprigs of rosemary. Pour the gravy over the chops and vegs and oven bake casserole for 1.5 - 2 hours at 180 degs C (Gas 4) depending on size of dish.

Salt & pepper your chops. Sear to your preferred doneness. Serve with couscous cooked in chicken broth, then mix in chopped raisins or currants, pinenuts, and ground cardamom & fresh spinach sauted in olive oil with garlic. In the pan you seared the lamb in, add some red wine stirring to deglaze the pan reduce by half and whisk in some butter & fresh rosemary.
