You shouldn't. It effects the taste and the quality. Canned milk gives a much different texture and smoothness.

I bought a large can of pumpkin pie mix today only to realize once I got home that their recipe called for canned milk. I used regular milk and I think the pies turned out very well.

you can use heavy whipping cream. (NOT cool whip the real stuff, you'll find it next to the half n half) however it wont be as sweet and thick as canned milk.
