I need a good southern recipe on collard greens....?!
Answers: Any suggestions? This will be my first time making collards....and eating them but that's what I am suppose to bring to my family get together...thanks for all your help :-)
Paula Deen's Recipe - quite southern. I grew up in the south and my family made collard greens often. They always made with salt pork (fat back). Hot peppers were a must have side as was vinegar.
Collard Greens
1/2 pound smoked meat (ham hocks, smoked turkey wings, or smoked neck bones)
1 tablespoon House seasoning, recipe follows
1 tablespoon seasoned salt
1 tablespoon hot red pepper sauce
1 large bunch collard greens
1 tablespoon butter
In a large pot, bring 3 quarts of water to a boil and add smoked meat, house seasoning, seasoned salt and hot sauce. Reduce heat to medium and cook for 1 hour.
Wash the collard greens thoroughly. Remove the stems that run down the center by holding the leaf in your left hand and stripping the leaf down with your right hand. The tender young leaves in the heart of the collards don't need to be stripped. Stack 6 to 8 leaves on top of one another, roll up, and slice into 1/2 to 1-ince thick slices. Place greens in pot with meat and add butter. Cook for 45 to 60 minutes, stirring occasionally. When done taste and adjust seasoning.
Serve with favorite dish as a side.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

Here are basic cooking instructions for turnip greens, collard greens, or mustard greens, with popular variations and additions.
Difficulty: Easy
Time Required: 90 minutes
Here's How:
1. Thoroughly wash 2 pounds of greens. Two or more washings may be necessary.
2. Trim tough stalks and tear or cut large greens in pieces. Cut thick veins out of collard greens.
3. In a large pot, bring 6 to 7 quarts of water to a boil.
4. Add a ham hock or a 4-ounce piece of salt pork to the pot.
5. Add a tablespoon of salt.
6. Continue boiling for 10 or 15 minutes.
7. Add the washed greens to the pot.
8. Cover and simmer until greens are tender. Depending on the type of greens used, this might take an hour.
9. Makes enough for 4 people.
NOTE: Crushed red pepper, a few tablespoons of bacon grease, chopped onion, or other seasonings can be added to the pot for more flavorful greens. Serve with cornbread and pepper sauce or cider vinegar.

Southern style:
Collard greens they will cook down so you will need to use a lot of them. 2 to 3 pounds
Seasoning pork or ham hock or ham bone (your choice)
Salt to taste
Bring greens to a boil and drain
Bring back to a boil and put your seasoning meat in an turn down to simmer. I like mine cooked until they are soft.
