Boiling sweet potatoes-turning colors?!


Question: I'm boiling a batch of sweet potatoes for a dish but every time I do this, I end up with a few that have discolored areas just inside the where the peel is (very dark color). It makes the potatoes look awful when I slice them....I have to boil them for the recipe....suggestions on how to cook them so they don't dis-color?

It almost sounds as though they are oxidizing. If the color bothers you, trim those areas away and eat the rest. If you want to do a new batch, begin by slicing them or quartering them then make sure you have a large enough pot to completely cover them and to give room so that they aren't lying on top of each other or touching each other when they cook. The water needs to be able to move freely all around each piece. Good luck.

You have to peel them.
Cut them into small cubes and boil..no more problems.

Have you tried using a microwave? If you prick the sweet potatoes with a fork and place a few in the microwave and cook them, it turns out great. Some microwaves like the one I have even have a Potato pre select button so it takes the guess work out of how long it takes, all you do is put in the amount of potatoes you're cooking.

if they discolor in certain places it probably means that they are almost over ripe (like when a banana has brown spots-its still fine but it just doesn't look appetizing) try getting harder potato's?

Start with a big pot of water, so that the potatoes have room to cook evenly, then make sure you don't over cook them.

Put `em in microwave. Dice them, they cook faster!. With butter and brown sugar. Yum Yum
