Turkey Spectacular Casserole
2 1/2-3 c. cooked and cut up turkey
1 can French style green beans
1 can cream of celery soup
1 T. pimento
1 T. chopped onion
1/2 c. water chestnuts
1/2. mayonnaise
1 pkg (6 oz) Uncle Ben's wild rice
Cook wild rice as directed. Put all ingredients in a casserole. Bake uncovered for 45 minutes at 350.
(I have increased the pimento and onion to 1 1/2 T. and added the same amount of green pepper, that's good too)
BBQ Turkey Sandwiches
3 cups shredded cooked turkey
1/2 cup sweet bbq sauce
3 Tbs minced pecans
Heat ingredients well mixed until hot
Serve on toasted onion buns.

Impossibly Easy Turkey Club Pie
1 1/2 cups cut-up cooked turkey
8 slices bacon, crisply cooked, crumbled
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick? or Bisquick Heart Smart? mix
1 cup milk
2 eggs
1. Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. Sprinkle turkey, bacon and cheese in pie plate.
2. In small bowl, stir remaining ingredients until blended. Pour into pie plate.
3. Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.
Turkey Ratatouille
3/4 pound turkey breast tenderloin, cut into 3/4-inch pieces
1/8 teaspoon pepper
1 tablespoon olive or vegetable oil
2 cups frozen stir-fry bell peppers and onions, (from 1-pound bag)
1 small eggplant, cubed (2 cups)
1 medium zucchini, cubed (1 cup)
1 can (14 1/2 ounces) Italian-style stewed tomatoes, undrained
1/4 cup shredded Parmesan cheese
1. Sprinkle turkey with pepper.
2. Heat oil in 12-inch nonstick skillet over medium-high heat. Cook turkey in oil 3 to 5 minutes, stirring occasionally, until brown.
3. Stir in stir-fry vegetables. Cook 2 minutes, stirring occasionally. Stir in eggplant and zucchini. Cook 2 to 4 minutes, stirring occasionally, until vegetables are tender.
4. Stir in tomatoes; reduce heat. Cover and simmer 3 to 5 minutes, stirring occasionally, until sauce is desired consistency. Sprinkle each serving with cheese.
