Blueberry pancakes are a classic favorite recipe. They are really easy. You can add blueberries and a touch of cinnamon to your favorite pancake recipe or use the recipe here.


Ingredients

2 cups all-purpose flour
1/4 cup whole wheat flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
2 large eggs
4 tablespoons melted butter or oil
2 cups buttermilk
1 1/2 cups frozen blueberries
additional water if required

Note: We think that the touch of whole wheat flour gives this pancake a wonderful texture and flavor. If you prefer a pancake without whole wheat flour, simply substitute all-purpose flour.

Directions

1. Mix the dry ingredients together in a large bowl.
2. Mix the egg, butter, and buttermilk together in a small bowl. Make a depression in the dry ingredients and add the liquid mixture. Stir until moistened—some lumps will remain. Add more water to get the right consistency, if required. Do not over mix.
3. Gently stir in the blueberries, stirring only until dispersed.
4. Pour about 1/3 cup of batter onto a hot, lightly greased griddle. Cook for about two minutes on medium heat or until the edges are set and the bubbles begin to cook into open craters. Turn over and cook on the other side.


Serve hot.

Make a batch of home-made pancake batter and fold in thawed/well drained frozen berries at the last minute, just before making them.

After putting the batter on the grill/pan, sprinkle the blueberries on top.

After the first side is cooked, flip the pancakes and finish cooking.

Doing it this way, you can have the same pancake batter for many different fruits, nuts, chocolate and toppings.

How do you prepare your pet for the cold?

As the mercury drops and my heating bills rise, I find myself grabbing my winter coat more often before stepping out for a walk. That got me thinking about how our furry friends cope with the colder weather.

I’m lucky that I live in an area where winters are mild but I keep my kitties indoors all year anyway. There’s not much change in their daily routine -- except to undergo more frequent brushing!

For the millions of animals living in regions with extreme winters, however, owners need to take some extra steps to ensure their pets’ safety and comfort until the spring thaw. We Answerers are pretty passionate about our pets – many of us consider them our “children” and encourage others to keep pets inside during winter months if possible.

But bringing our pets indoors creates a different set of concerns. As Answerer nkbapbt knows, some pets get stir-crazy being inside so long and need new forms of entertainment. The drier weather plays havoc for both pets and their owners, but community member inspiredbyme has a solution for that.

If for some reason animals have to be left outside during the winter, Tammy C and Ragnarok provided great tips on how to make them more comfortable. What do you do to make sure your pet survives the cold winter comfortably?

The easiest, is to buy Aunt Jamima pancake mix, add water and put some blueberries in...but homemade pancakes are really easy to make, then add blueberries..
