I often read in American stories about chicken fried steak.What isit & how do you make it?!

Chicken Fried Steak
2 top sirloin steaks
1 sleeve saltine crackers
3 tbsp. flour
1 egg slightly beaten
1/3 C. oil (for frying)
salt and pepper to taste

Directions
using rolling pin, crush sleeve of crackers, lay out on a paper plate.
using a wet mallet, pound beef to about 1/4 in. thick
dredge beef in flour
dip into beaten egg
coat with crushed saltines
fry in med. -med./high oil about 5-6 min per side (until brown and crispy)
salt and pepper to taste
make gravy if desired...enjoy!

Chicken-fried or country-fried steak is usually made with round steak, tenderized then dipped in an egg and milk mixture, then dredged in seasoned flour or bread crumbs. The coated steak is then fried in hot fat until the coating is crispy and browned, much like fried chicken. A milk gravy is often made to be served with the steak, along with mashed potatoes.

Country fried steak can also be made by coating the tenderized steaks with seasoned flour or crumbs. Smothered steak, another version, is fried then simmered in gravy, which makes a tougher cut of meat even more tender.

According to The Dictionary of American Food and Drink by John Mariani, the term "chicken-fried steak" first appeared in print in the year 1952. It has long been a favorite dish in the South, Midwest, and Southwest United States.

It's is a piece of steak, that is thin and usually has been pounded and tenderized, breaded and fried (as is in fried chicken) usually served with mashed taters and gravy.

Get a 'Spencer steak' or a thin round steak and 'beat it' with the 'rough end' of a meat mallet. Dredge it in flour, in egg mixed with milk, and in breadcrumbs. Fry in 1/4" oil. Serve with mashed potatoes and 'country' gravy made with 'sausage oil' and bits of sausage in it on both the potatoes and the steak. It's a very good meal, but have a salad or some green beans so it's 'balanced.'

CHICKEN FRIED STEAK

2 pkg. tenderized cube or round steak
1 c. whole milk
1 1/2 c. flour
2 tsp. salt
1 tbsp. black pepper
1 1/2 - 2 c. cooking oil
Good heavy skillet

I start heating my skillet first and when it gets warmed up (7 minutes), I add my cooking oil and let it heat also. While that is heating up, I get the steak ready, pound each steak with the side of a mallet or palm of your hand until very thin. Place steaks (2 at a time) in shallow dish containing milk. Next, mix the flour, salt and pepper in a shallow dish. Remove steak from milk, dredge in flour mixture, place into skillet and brown on both sides. Continue cooking until all steaks are cooked.

CREAM GRAVY:

1/3 c. hot steak drippings
1/4 c. flour
2 c. milk
Salt and pepper to taste

I use another skillet, let it get hot and add steak drippings, flour, salt and pepper. Stir with wire whisk until blended. Next add 2 cups milk, continuing to stir until gravy thickens. Serve with chicken fried steak and mashed potatoes.

It’s made with beef, so If you have any aversion to cows then just stay away. If you are interested then you can take any cut of beef, but tenderloin is relatively good and make your favorite batter...put a nice coat on it and place it either in a deep fryer or just a pan with some oil. It's tastes nice if you fry up some bacon first then use that oil with some other type to cook your CFS. Enjoy!

Ranch Style Chicken Fried Steak And Gravy

4 pounds round steak, 1/2-inch thick
1 cup milk
1 cup unbleached Flour
salt and pepper
milk

4 tablespoons fat
4 tablespoons unbleached flour
1 quart milk

Tenderize round steak. Dip in milk and then flour, salt and pepper
to taste. Fry in deep fat at approximately 375 Degrees F. until
golden brown. After steak is done, pour off fat leaving about 4
Tbsp in pan. Add 4 Tbsp flour. Stir until smooth. Add 1 qt milk.
Stir and cook until until thickened for steak gravy.

Far as I know it's cube steak, battered and fried like chicken.
