So i have a math/cooking question?!


Question: so Im making the turkey for thanksgiving, i have the turkey in the fridge de-thawing, and i have my brine recipe all ready to go. but it calls for 1/2 ounce ground cloves and 1/2 ounce ground ginger - how do i measure that out? here is the brine recipe:

Wolfgang’s Brined Roast Turkey
Brine:
1 gallon water
1/2 ounce ground cloves
1/2 ounce ground ginger
4 ounces cracked black peppercorns
12 bay leaves
1 pound kosher salt
24 ounces honey
24 ounces maple syrup

1 (10-pound) whole fresh turkey

In a large stockpot, bring the water, cloves, ginger, black peppercorn, bay leaves and salt to a boil. Lower to a simmer and stir in the honey and maple syrup until well blended. Turn off heat and allow to cool to room temperature.

by the way I did the math on the pound of salt.

it's a bit over 1 1/2 cups 1.56

salt is heavier than water. I was wondering why someone asked that. now I know-for brine

Fluid ounces are more than dry ounces so don't listen to the girl above you. You would have to weigh it. If you don't have a kitchen scale, see if you can tell how many ounces are in the bottle of the spices. If it has the ounces then try to divide the # of ounces by 1/2 for the 1/2 ounces you need. For instance if it is a 8 ounce bottle divided by 1/2 = 16 servings in the bottle try to measure out 1/16 of the bottle. I know its hard but you can eyeball it.

That would be about one tablespoon of each of the cloves and ginger. 1/2 cup is 4 ounces. So 1/2 ounce would be 1/16 cup.1/16 cup is 1 tablespoon...
