What can i add to cornbread to make it more moist?!


Question: I buy the lil box's of I think its called Libbys cornbread, but a lot of times it comes out a lil too dry for my taste...What can I add to it to make it more moist?

I add corn to it, or you could add creamed corn to it. I use honey instead of sugar.

maybe a little water milk or cream but not to much!You don't want the cornbread to get soggy

I use Jiffy mix a lot - the box calls for 1 egg and 1/3 cup milk. I increase milk to 1/2 cup so it wont be dry and add 1 TBSP sugar or splenda.

Recently I tried Sylvia's brand cornbead mix and it is really good - has a slight cinammony taste to it and a great texture. She has a number of soul foods and seasonings, and they are all great.

Olive oil, maybe?

How about a little creamed corn? You can either add it as is, or puree it if you don't want to bite into corn. In fact, you could even puree canned or thawed frozen corn and add that.

It also my be that your oven is a bit hot. Get an oven thermometer and test it out. Or reduce the baking temperature by 25 degrees and see how it comes out. Another approach is to start testing doneness a little earlier and perhaps you can pull it out before it gets too dry.

1 can of cream corn to 1lb of corn meal

i do the same except i pour half the mix and then layer with different stuff like - bell peppers , corn,jalapenos-minced , cheese ( pepper-jack -my favorite ) jam , you choose then top with the rest of the mix and bake as instructed i'm sure you'll love it and believe me you can make a meal out of a loaf or two -1/2 w/meat and 1/2 w/the side all in the same pie !
