INGREDIENTS
1 (15 ounce) can pumpkin puree
1 (14 ounce) can sweetened condensed milk
2 egg yolks
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 egg whites
1 (9 inch) unbaked pie shell
2 tablespoons all-purpose flour
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
2 tablespoons butter, chilled
1 cup chopped walnuts


DIRECTIONS
Preheat the oven to 425 degrees F (220 degrees C).
In a large bowl, mix together the pumpkin, sweetened condensed milk, and egg yolks. Stir in 1 teaspoon cinnamon, ginger, nutmeg, and salt. In a large glass or metal bowl, whip egg whites until soft peaks form. Gently fold into pumpkin mixture. Pour filling into pie shell.
Bake for 15 minutes in the preheated oven. While the pie is baking, prepare the streusel topping: In a small bowl, combine the flour, brown sugar, and 1 teaspoon cinnamon. Blend in the cold butter with a fork or pastry blender until the mixture is crumbly. Mix in the chopped nuts. Sprinkle the topping over the pie.
Reduce the heat to 350 degrees F (175 degrees C). Bake an additional 40 minutes, or until set.

Mashed potatoes, mac and cheese is what I'm making. Mom is making collard greens and green bean casserole and dressing. also dinner rolls, candied yams, and apple pie..possibly a sweet potatoe pie. Mom ordered cajun turkey and ham from Honeybaked Ham, so I hope it's good!

baked beans... go to meals.com and type in baked beans in the seach. then go to the recipe that says Busch's Baked Beans..... the best baked bean recipe i've ever found!

Kings Arms Tavern Sweet Potatoes

3-pounds sweet potatoes
?-cup light brown sugar, packed divided
3-tablespoons butter
5 teaspoons cinnamon
?-teaspoon nutmeg
?-teaspoon salt
1-cup milk

Preheat oven to 400o
Grease 1? quart casserole
Cook sweet potatoes in boiling salted water until done; drain peel and mash them.

Stir in all the remaining ingredients except 2 tablespoons of sugar.

Turn the mixture in to prepared casserole and sprinkle with remaining sugar.

Bake at 400o for 30 minutes.

PUMPKIN can be substituted for the sweet potatoes and it comes out well.

Lime Jell-O Mold

1 large box Lime Jell-O
8 ounces Cream Cheese - room temperature
1 can Crushed Pineapple - chilled
1 16 ounce container of Cool Whip or fresh whipped cream

Drain pineapple saving liquid to use in Jell-O. Make Jell-O using the quick-set instructions replacing some of the cold water with the pineapple juice. Make sure gelatin is well dissolved. Place in fridge until semi-set. In a blender combine cream cheese and pineapple until well blended. Mix into semi-set Jell-O than fold in Cool Whip. Pour into a gelatin mold and refrigerate until set or over night. To serve, unmold onto a plate large enough for the mold.

I also make this using Kahlua, brandy, Kirsch, spiced rum or other liqueurs and add nuts and/or fruits that compliment the chosen liqueur.

Irish Crème Fudge

3 sticks of butter (3/4 pound)
3 cups sugar
2/3 cup evaporated milk
1 7-ounce jar Kraft marshmallow crème
12 ounce bag semi-sweet chocolate chips
1 bottle (airline size or nip) Irish Crème
2 cups walnuts or pecans - optional
2 8-inch square pans sprayed with non-stick spray

In a 3 quart sauce pan - preferably enameled cast iron - melt butter, sugar and evaporated milk. Bring to a boil, turn down heat to a low boil and cook for 5 minutes.

Turn off heat and mix in marshmallow crème. Once that is incorporated, mix in the chocolate chips until mixture is an even chocolate color then add the Irish crème and nuts, mixing thoroughly.

Pour mixture into pans and cool thoroughly before cutting into squares and serving.

Double Cherry Pie
10 servings
Prep: 45 minutes
Bake: 45 minutes

Ingredients
1/2 cup miniature semisweet chocolate pieces
5 tablespoons margarine or butter
3/4 cup quick-cooking or regular rolled oats
3/4 cup all-purpose flour
1/4 cup packed brown sugar
1 20-ounce can cherry pie filling
1 16-ounce can pitted tart red cherries (water-pack), drained
1/4 teaspoon almond extract
1/2 cup all-purpose flour
2 tablespoons packed brown sugar
2 tablespoons quick-cooking or regular rolled oats
3 tablespoons margarine or butter, softened
1/4 cup miniature semisweet chocolate pieces

Directions
1. Grease a 10-inch pie plate; set aside. For crust, in a medium saucepan melt the chocolate pieces and margarine or butter. Remove from heat; stir in oats, flour, and brown sugar. Press onto bottom and sides of prepared pie plate to form a firm, even crust. Bake in a 350 degree F. oven for 10 minutes.

2. Meanwhile, for filling, in a medium mixing bowl combine pie filling, cherries, and almond extract. Pour into the baked crust.

3. For topping, in a small mixing bowl stir together the flour, brown sugar, and oats. Cut in the margarine or butter until mixture resembles coarse crumbs. Stir in the chocolate pieces. Sprinkle over filling. Bake in a 350 degree F. oven for 35 minutes. Cool on a wire rack. Makes 10 servings.

Pumpkin Pie

1 (9 inch) pie shell
1 (8 ounce) package cream cheese, softened
1/4 cup white sugar
1/2 teaspoon vanilla extract
1 egg, beaten
1 1/4 cups pumpkin puree
1 cup evaporated milk
2 eggs, beaten
1/4 cup packed brown sugar
1/4 cup white sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 tablespoons all-purpose flour
2 tablespoons brown sugar
2 tablespoons butter, softened
1/2 cup chopped pecans

Preheat oven to 350 degrees F (175 degrees C).
To Make Cheesecake Layer: In a medium mixing bowl, beat cream cheese until smooth. Beat in 1/4 cup sugar, then add vanilla extract and 1 egg. Beat mixture until light and smooth. Chill mixture for 30 minutes, then spread into pastry shell.
To Make Pumpkin Layer: In a large bowl, combine pumpkin puree, evaporated milk, 2 eggs, 1/4 cup brown sugar, 1/4 cup white sugar, cinnamon, nutmeg, and salt. Mix until all ingredients are thoroughly combined.
Pour pumpkin mixture over cream cheese layer. Cover edges of crust with aluminum foil.
Bake in preheated oven for 25 minutes. Remove foil from edges and bake an additional 25 minutes.
To Make Pecan Streusel Layer: While pie is in oven, combine flour and 2 tablespoons brown sugar in a small bowl. Mix well, then add softened butter or margarine and stir until ingredients are combined. Mix in pecans.
After pie has been in oven for 50 minutes, remove and sprinkle pecan streusel evenly over top. Bake for an additional 10 to 15 minutes, until a toothpick inserted in center comes out clean.

Well dear....the great thing about being a grandma is you go to your daughters house and she cooks, and waits on you....its nice growing old when you have a wonderful child, I will make pies....but other than that, my daughters making it all, she is a great cook, I am making pumpkin pie, chocolate, coconut pie, and peach pie................gee that is alot of pie...
