Onigiri are nothing fancy, just a way to use leftover rice for lunches. Use Japanese style rice since long grain rice might nit be sticky enough. Shape warm cooked rice into kind of a ball and poke a hole for filling. Filling can be anything you like with rice, but typical ones are pickled plum (ume), grilled salmon, tuna and mayo, etc. Shape into a elongated ball or triangle. Sometimes they are toasted or grilled. Wrap a strip of nori (toasted seaweed sheet like for sushi) around to hold onto it without getting sticky fingers. Garnish with toasted black sesame if desired. The variations are limitless.
