The bread works well, a couple slices of apple work well and keeping air tight in the fridge works well also. Keeps the molasses stable.
You also do not have to throw it away. If it gets hard, just microwave for a minute or so. It'll soften up enough to use promptly. Don't let it set, use it, or it'll reharden. Works fine when used pronto though.
It has to be wrapped tightly to prevent air from getting in once opened.
They make ceramic stones for placing in brown sugar bags to keep them moist. But I always wrap mine tightly shut and never have a problem with it drying out.
I am a former chef and I have always used a crust of bread, but an apple and there are ceramic pieces for them.
Most people don't eat the crust and it lasts aleast 3-4 months. Just break it up and cover the top, I keep mine in a sealed plastic container with a screw top lid.
You have to keep brown sugar from air, so close it up tightly...maybe even put it in an airtight tupperware container.
Otherwise, there are these ceramic bears (or something similar) you can buy in the store that keeps the sugar soft.
if you want to resoften then wet a dish towel with hot water wring it out put sugar in bowl and place towel over top
I keep mine tightly wrapped, I also drop a piece of bread in the bag. the bread absorbs the moisture, so the sugar doesn't dry moisten, dry up, and harden.
The absolute best way to keep brown sugar soft is to keep it in a sealed, air-tight container. Put a slice of fresh bread in with the brown sugar, and it will keep it wonderfully soft.
When you open it, immediately put it into a tightly sealed ceramic or plastic Tupperware. Every time you use the sugar, reseal the container !TIGHTLY! If your brown sugar ever does get hard though, pick it up in your [CLEAN] hands and "massage" it so to speak.
